There are several snacks we prepare during our Diwali celebrations but one snack we prepare without fail is the omapodi recipe or plain sev recipe. it is mainly prepared with spiced besan or chickpea flour dough which is then later deep-fried in medium-heat oil.

There are several, but perhaps one of the simple yet tasty snack recipes is the deep-fried noodles or also known as plain sev. It can be made with different ingredients, but the basic one is besan or wheat flour sev snack.
There are several types of omapodi or plain sev prepared, which mainly differ in their thickness and each one has its own significance. The nylon or the thin sev is mainly used for garnishing the chaat recipes. It is mainly used in dabeli recipes, sev puri or even in dahi puri recipes. The next type is the medium-thickness plain sev which is mainly used in a spicy mixture or chivda recipes. In addition, it can also be used in curries like sev tomato ki sabji and any tomato-based curries. The last type is the thick plain sev which again can be used in spicy mixture and poha chivda. Further, it is also used in misal pav recipes and usal pav recipes too.
Furthermore, some important tips and recommendations for a perfect plain sev or omapodi recipe. Firstly, I would heavily recommend using fresh wheat and besan flour for any type of deep-fried snack. This is because we generally keep these snacks for a couple of days and hence the shelf life. Also, deep frying uses fresh oil and preferably vegetable or sunflower oil. We do not want to have the flavour oil infused into the sev snack. Lastly, store these snacks in an air-tight container for a longer shelf life without having a foul smell to the snack.

Sev Recipe 2 Ways | Omapodi Mixture Recipe
Ingredients
- 1 cup besan / gram flour
- ¼ cup rice flour
- ¼ tsp turmeric / haldi
- pinch of hing / asafoetida
- ½ tsp salt
- ¼ cup water
- oil for deep frying
Instructions
- firstly, in a large mixing bowl take 1 cup besan and ¼ cup rice flour.
- also add ¼ tsp turmeric, pinch of hing and ½ tsp salt. combine well.
- now add ¼ cup water (or as required) and prepare smooth dough. the dough will be slightly sticky, thats normal.
- grease the small holed mould with some oil and stuff dough into it.
- further, press and spread the sev in hot oil forming a circle in the oil and make sure you do not overlap.
- after a minute, flip over and fry the other side.
- finally, drain over kitchen paper to absorb oil and repeat making more sev with the remaining dough.
How to make Sev & Omapodi with step-by-step photos:

Notes:
- Firstly, adding rice flour makes sev more crispy.
- Also, add spices like chilli powder to make khara sev recipe.
- Additionally, fry in hot oil, else sev won’t be crispy and will absorb oil.
- Furthermore, make sure to use fresh oil, else sev won’t last long.
- Finally, sev / omapodi stays good for a month when stored in an airtight container.
omapodi recipe is an alltime favourite of children. i’ll try for the pongal festival .Also please let me know the making of shakarai atchu which is prepared widely during the pongal season.
