Ingredients
for dough:
- 2 cup maida
- ½ tsp ajwain
- ½ tsp salt
- ¼ cup ghee
- ½ cup water, for kneading
- oil, for frying
for aloo stuffing:
- 2 tsp oil
- 1 tsp cumin
- pinch hing
- 2 chilli, finely chopped
- 1 inch ginger, finely chopped
- ½ tsp chilli powder
- ½ tsp coriander powder
- ½ tsp cumin powder
- ½ tsp garam masala
- 1 tsp aamchur
- ¼ tsp pepper powder
- 3 potato, boiled & mashed
- ½ cup peas
- ½ tsp salt
- 2 tbsp coriander, chopped
Instructions
- firstly, in a large bowl take 2 cup maida, ½ tsp ajwain, ½ tsp salt and ¼ cup ghee.
- crumble and mix well until the flour turns moist.
- now add ½ cup water and start to knead the dough.
- knead to a tight dough adding water as required.
- cover and rest for 20 minutes.
- to prepare the stuffing, in a pan heat 2 tsp oil. add 1 tsp cumin, pinch hing, 2 chilli and 1 inch ginger.
- saute until the spices turn aromatic.
- keeping the flame on low, add ½ tsp chilli powder, ½ tsp coriander powder, ½ tsp cumin powder, ½ tsp garam masala, 1 tsp aamchur and ¼ tsp pepper powder.
- saute on low flame until the spices turn aromatic.
- further add 3 potato, ½ cup peas and ½ tsp salt.
- mix well making sure everything is well combined.
- add 2 tbsp coriander and mix well. potato stuffing is ready for samosa.
- to prepare the puff samosa, knead the dough again.
- roll the dough to a slightly thick thickness.
- now cut into pieces.
- place a tsp of prepared aloo stuffing in the centre.
- cover with another piece of the pastry sheet and stick using some water over the sides.
- deep fry in medium hot oil.
- stir on medium flame until the puff samosa turns golden brown and crispy.
- finally, enjoy puff samosa or samosa bites with chutney.
