Ingredients
  

  • 1 sitafal
  • 6 cup milk
  • few kesar / saffron
  • ½ cup condensed milk
  • 2 tbsp nuts, chopped

Instructions
 

  • firstly, take 1 sitafal and collect the pulp. make sure to remove the seeds.
  • now in a large kadai heat 6 cup milk and add few kesar.
  • stir and get the milk to a boil.
  • when the milk comes to a boil, stick the cream to the sides of the kadai.
  • continue to simmer and boil until the milk reduces to half.
  • now add ½ cup condensed milk and mix well.
  • continue to boil further until the milk thickens completely. make sure to stick the cream to the sides.
  • now scrape all the cream from the sides and mix well. this helps to make rabdi creamy.
  • cool the rabdi completely, now add sitafal pulp and mix well.
  • also, add few chopped nuts and mix well.
  • finally, enjoy Sitafal Rabdi chilled topped with kesar and nuts.

Notes:

  • Firstly, adjust the sweetness of rabdi depending on the sweetness of sitafal.
  • Also, make sure to add the sitafal once the rabdi has cooled completely.
  • Additionally, i have not added cardamom as the flavour of kesar will be lost.
  • Finally, Sitafal Rabdi can also be frozen in the ice cream mould to make Sitafal Ice Cream or Sitafal Kulfi.
