i am personally not a huge fan of toast recipes and i am more of a sandwich recipe admirer. hence my first attempt with this recipe was the masala toast sandwich recipe prepared with spicy vegetables stuffing and fine sev topping. however, my husband really appreciates the toast recipe. apparently, he likes almost all varieties of toast and he can have it on a daily basis. one of the most common toast recipe he prepares often for himself is the peanut butter toast. whenever i am out any option for morning breakfast i end up with these toast recipes. as a matter of fact, i prepare the toast recipe with any left out veggies curry with a mix and match of cheese and tomato ketchup for morning breakfast.
while the recipe for cheese masala toast is extremely simple, yet some tips, recommendations and serving ideas. firstly, you are more than welcome to try this recipe with any variety of bread. i have used the white sandwich bread, but it should equally taste with multigrain and wheat bread too. secondly, i would heavily recommend to use grated cheddar cheese for this recipe and avoid mozzarella or any other cheese. lastly, i have applied spicy green chutney on top the bread for the spicy and zesty flavour. however, i would recommend you to avoid it if you are planning to serve it for kids.

Ingredients
- 2 tsp oil
- ½ onion, finely chopped
- 1 green chilli, finely chopped
- 1 to mato, finely chopped
- ¼ capsicum, finely chopped
- ½ carrot, grated
- 2 tbsp corn
- ¼ tsp turmeric / haldi
- ½ tsp kashmiri red chilli powder / lal mirch powder
- 1 tsp chaat masala
- ¼ tsp pepper, crushed
- ¼ tsp salt
- 2 tbsp tomato sauce
- 2 tbsp coriander, finely chopped
- 3 slices bread, white / brown
- 3 tsp butter
- ½ cup cheddar cheese, grated
- 3 tsp green chutney
Instructions
- firstly, in a large kadai heat 2 tsp oil and saute ½ onion, and 1 green chilli.
- also saute 1 tomato for a minute.
- also saute ¼ capsicum, 2 tbsp corn and ½ carrot.
- cover and cook for 5 minutes or till vegetables turn soft yet crunchy.
- now add ¼ tsp turmeric, ½ tsp chilli powder, 1 tsp chaat masala, ¼ tsp pepper and ¼ tsp salt. saute well.
- further add 2 tbsp tomato sauce and mix well.
- finally add 2 tbsp coriander and mix well. masala is ready.
- spread ½ tsp of butter of each side of bread and toast golden.
- flip over and spread 1 tsp green chutney over toasted side of bread.
- also spread a tbsp of prepared masala over bread.
- grate 3 tbsp of cheddar cheese over the masala.
- cover and simmer for 2 minutes or till cheese melts.
- finally, cut the cheese masala toast into half and serve.

- firstly, add vegetables of your choice to make more nutritious.
- also, reduce the spice accordingly, however taste great when prepared spicy.
- additionally, use cheese of your choice like processed cheese or mozzarella cheese.
- finally, cheese masala toast taste great when served hot and spicy.

you can skip if you do not like it. ensure to add less spice if you are skipping cheese
