susla recipe | puffed rice upma | mandakki or churumuri susla | uggani with detailed photo and video recipe. a traditional spicy snack recipe made with puffed rice, a combination of onion and tomatoes. it is generally served as an evening snack but can also be served for morning breakfast with a cup of tea. the recipe is very similar to the traditional poha or pohe recipe, made with flattened rice, onions and spices.
as i mentioned previously, susla recipes or mandakki recipes are very common across north karnataka. it is used in almost every recipe in north karnataka. one such hugely popular recipe is the mandakki susla or also known as puffed rice upma. the recipe is somewhat in between to the maharashtrian kanda pohe and spicy churumuri chaat recipe. in other words, it is a fusion of these 2 recipes and hence susla recipe can be treated as both snack and also for breakfast. i personally make it for my breakfast as it is very quick to make it and also a pleasant alternative. but it is completely up to your individual preference.
anyway, i would conclude by adding some tips, suggestions and variations to the susla recipe or puffed rice upma. firstly, make sure to rinse the churumuri in water and squeeze off the water before it turns mushy. secondly, you can also add tomato to get the tangy flavour. puffed rice turns soggy when it rinsed in water, so make sure not to mash and mix gently. lastly, the addition of veggies is completely open-ended and you can vary as per your taste. you can vary it by adding grated carrot, finely chopped capsicum, corn kernels, finely chopped beans and even seasonal raw mangoes.

Ingredients
- 3 cup puffed rice / churumuri / murmura
- 3 cup water
- 2 tbsp oil
- 2 tbsp peanuts
- ¾ tsp mustard
- 1 tsp cumin / jeera
- pinch hing / asafoetida
- few curry leaves
- 1 onion, finely chopped
- 2 chilli, finely chopped
- ½ tsp turmeric
- 1 tsp sugar
- ¾ tsp salt
- ¼ cup putani powder / roasted gram dal powder
- 1 tbsp lemon juice
- 2 tbsp coriander, finely chopped
Instructions
- firstly, in a large bowl take 3 cup puffed rice / churumuri / murmura.
- pour 3 cup water and rinse the churumuri well. do not allow to soak churumuri as they turn mushy.
- squeeze off the water gently and keep aside the churumuri.
- in a large kadai heat 2 tbsp oil and roast 2 tbsp peanuts on low flame until it turns crunchy.
- now add ¾ tsp mustard, 1 tsp cumin, pinch hing and few curry leaves. splutter the tempering.
- further add 1 onion, 2 chilli and saute well.
- add ½ tsp turmeric, 1 tsp sugar, ¾ tsp salt and saute on low flame.
- add in squeezed churumuri along with ¼ cup putani powder.
- mix gently until the spices are coated well.
- cover and simmer for 3 minutes or until flavours are absorbed.
- now add 1 tbsp lemon juice and 2 tbsp coriander. mix well.
- finally, enjoy churumuri susla / puffed rice upma for your breakfast or snacks.

notes:
- firstly, make sure to not over soak or over squeeze churumuri.
- also, susla can be topped with sev while serving.
- additionally, add tomato along with onions and skip lemon juice for variation.
