Traditionally, the sesame ladoo is prepared with a combination of black and white; however, the ladoo can also be prepared with either of them. However, in Maharashtra, til ka ladoo is popularly prepared with white sesame seeds during Ganesh Chaturthi and offered as prasada.
I have prepared a lot of ladoo recipes, either with besan, coconut or even motichoor, all of which contain sugar syrup or sugar content. But the til ladoo recipe is my personal favourite recipe just because it is prepared with jaggery. Basically, the sweetness from jaggery is much better from a health perspective compared to sugar. It contains more nutrients than refined crystal sugar due to its molasses content. Whereas refined sugar contains empty calories without many vitamins or minerals. In addition, the nutrients supplied by the combination of peanut and sesame make it an energy booster ladoo recipe.
While the til ka ladoo recipe has relatively few complicated steps, there are some tips and recommendations for achieving a perfect ladoo. Firstly, I have used jaggery to prepare the sweet syrup in this recipe, but it can be easily replaced with normal sugar, raw sugar or even palm sugar. Secondly, I highly recommend dry-roasting the sesame seeds on a low flame, taking care not to burn them. Lastly, I have shaped the ladoo without grounding the sesame seeds. Alternatively, you can coarsely ground one-third of the sesame mixture before shaping it into ladoos. Store these in air-tight containers for a longer shelf life.
