tomato sev recipe | tomato sev namkeen | khasta tamatar namkeen sev with detailed photo and video recipe. an interesting munching snack recipe made with gram flour and tomato puree. it is an very good alternative recipe compared to the traditional besan sev which generally lacks any additional flavour. due to the addition of tomatoes, it adds nice aroma, tangy taste with the existing spicy and savoury taste from besan.
i have posted quite a few variations of sev recipe starting from a basic to the super complicated recipe. out of all my variations, tomato sev has become my new favourite recipe. the main reason being the taste and flavour this recipe has to offer. i personally like the combination of sweet, sour and savoury taste in my dish. this namkeen snack has to offer it and i just love it. as matter of fact i even like aloo bhujia which has similar taste to offer but not the sweetness. in addition the other main reason i like about this snack is the usage in other recipe. you can use it to top it in any street food snack and also for the sev tamatar ki sabji.
furthermore, some important and critical steps, tips, suggestions and variations for a perfect tomato sev recipe. firstly, i have used thin or fine shaper to get the nylon sev. but you can experiment with other shaper and can go until the medium size if you do not have access to thin one. secondly, deep fry these in a low to medium flame so that it gets cooked evenly. also do not over crowd the deep fry pan and try to fry in small batches. lastly, store the sev in air tight container for a longer shelf life. alternatively you can store it in a zip lock bag in small portions.

Ingredients
- 1 tomato, chopped
- 2 cup besan / gram flour
- ½ cup rice flour
- ½ tsp turmeric
- 1 tsp kashmiri red chilli powder
- pinch hing / asafoetida
- 1 tsp salt
- 2 tbsp butter, softened
- ½ tsp carom seeds / ajwain
- water for kneading
- oil, for frying
Instructions
- firstly, blend 1 tomato to a smooth paste without adding any water.
- in a large bowl sieve 2 cup besan, ½ cup rice flour, ½ tsp turmeric, 1 tsp chilli powder, pinch hing and 1 tsp salt.
- sieve well making sure there are no lumps.
- further add 2 tbsp butter, ½ tsp carom seeds and mix well.
- sieve the prepared tomato paste to get rid of skin and seeds.
- mix well making sure everything is well combined.
- add water as required and knead to soft dough.
- take the fine holes mould and grease the chakli maker.
- stuff in ball sized dough into the press.
- further, press and spread the sev in hot oil forming a circle in the oil and make sure you do not overlap.
- fry until it turns golden and crisp.
- add in few curry leaves and allow to splutter.
- drain over kitchen paper to absorb oil.
- finally, break tomato sev into pieces and enjoy tea time snack.

notes:
- firstly, increase or decrease the amount of tomato pulp depending on tanginess.
- also, adding rice flour gives crisp texture to sev.
- additionally, you can also add curd along with tomato paste to enhance tangy flavour.
- finally, tomato sev recipe stays good for a month when stored in an airtight container.
