i have always been a huge fan of brinjal recipes. whether it is curry prepared from or it even the rice recipe like vangi bhath recipe. perhaps i got the addiction of brinjal during our stay in hubli. brinjal recipes are very popular and especially the ennegayi recipe is the pride of north karnataka. during our stay in hubli, we heavily adopted the eggplant recipes. this included the vangi bath and baingan bharta recipe too. initially, we were using the store bought vangi bath powder or mtr powder. however my mother was able to learn it quickly and started preparing it.

furthermore, vangi bhath recipe was long due from me. being born and and brought up in karnataka, i should have posted vangi bhah recipe long back. nevertheless, i am sharing this yummy brinjal rice recipe. this authentic recipe is shared by mother. a special thanks for her. she is my first teacher when it comes for cooking. she did teach me other brinjal recipes too. specifically, ennegai recipe (stuffed brinjal) and bhaingan bharta recipe.

Ingredients (1 cup = 250 ML)
  • 4 tbsp oil
  • ¾ tsp mustard seeds
  • ½ tsp urad dal
  • ½ tsp chana dal
  • 1 dried red chilli
  • few curry leaves
  • 1 green chilli slit lengthwise
  • 15-20 pieces of brinjal / eggplant 1 inch pieces
  • 3 tsp groundnuts
  • ¼-½ cup tamarind extract
  • 2 tbsp vangi bhath masala powder
  • small piece of jaggery
  • salt to taste
  • ¼ tsp turmeric powder
  • 1 bowl cooked rice
  • few coriander leaves finely chopped
Instructions
  1. firstly, in a large kadai, take 4 tbsp of oil.
  2. furthermore, add the tempering ingredients like mustard seeds, urad dal, chana dal, red chilli and curry leaves.
  3. allow them to splutter. and then add green chilli.
  4. after that, add chopped brinjal. to avoid de-colouration and to remove the bitterness, soak brinjals in water.
  5. also add groundnuts.
  6. saute and fry them till they shrink in size.
  7. furthermore, add tamarind juice.
  8. also add 2 tsp of vangi bhath masala, jaggery, salt and turmeric powder.
  9. give a good mix and cook till the tamarind water is evapoartaed.
  10. furthermore, add cooked rice and gently mix the rice with the masala.
  11. also add few coriander leaves.
  12. finally, serve vangi bhath with raita.

notes:

  • firstly, you can use any brinjals of your choice.
  • furthermore, adding a small piece of jaggery enhances the flavour of bhath.
  • also, instead of tamarind juice you can replace it with curd.
  • finally, you can also prepare the same with rava instead of rice.
