veg frankie roll recipe | veg cheese frankie | veg cheese kathi roll with detailed photo and video recipe. a simple kathi roll recipe or frankie recipe prepared with left over chapati or roti wrapped with aloo stuffing with the goodness of cheddar cheese. a popular street food of india which is loved by both kids and adults can be served as evening snack or for tiffin box recipe.
i have already shared simple paneer frankie recipe and veg frankie recipe, however i have introduced a subtle variation to this popular veg cheese frankie. in this recipe i have prepared the veg aloo stuffing by adding peri peri sauce to it. basically it gives the spice and hotness to the stuffing, where as eggless mayo and cheese neutralises it and balances the taste. having said that, even plain chilli sauce can also be added which should have the same effect. further even schezwan sauce can also be added to have more spiciness in the stuffing.
while there isn’t much complicated steps in this veg frankie roll recipe, yet some recipe tips and suggestions. firstly, i have used homemade left over chapati for this recipe, but even store bought wholemeal wraps or even plain flour wraps should work. secondly, with respect to adding vegetables, it is open ended. you can add, carrots, peas, corn, mashed cauliflower and even sliced mushrooms. lastly, the grated cheese can also be added to the vegetable stuffing in addition to the final step. add the grated cheese only after the stuffing is cooled down.

Ingredients
for stuffing:
- 2 tsp oil
- ½ onion, finely chopped
- ½ capsicum, finely chopped
- 2 medium potato, boiled & mashed
- 3 tbsp peri peri sauce / chilli sauce
- salt to taste
other ingredients:
- 2 tsp butter
- 3 chapati / wrap, leftover
- 3 tsp mayonnaise, homemade / store-brought
- 1 cup cabbage, thinly shredded
- 6 tbsp cheddar / mozzarella cheese, grated
Instructions
- firstly, prepare the stuffing by heating oil.
- saute ½ onion till they turn translucent.
- also saute ½ capsicum for a minute or two.
- additionally, add 2 boiled and mashed potato and saute for a minute.
- furthermore, add 3 tbsp peri peri sauce / chilli sauce and salt to taste.
- mix well and stuffing is ready. keep aside.
- now heat tawa and warm up leftover chapati or wrap with some butter.
- further spread a tsp of mayonnaise (homemade / store-brought)
- also spread 2 tbsp of prepared stuffing.
- top with few shredded cabbage and grated cheese.
- roll tight making sure the stuffing doesn't come out.
- also wrap with a aluminum foil to get a street side feel.
- finally, serve veg cheese frankie or pack to your lunch box.
