veggie bites recipe | peri peri vegetable bites | veggie ball recipe with detailed photo and video recipe. a simple and healthy finger food recipe prepared with mix of vegetables with spicy peri peri sauce and other dry spices. it is an ideal kids snack recipe with loads of nutrient from the vegetables. it can also be served as party starter or as appetizer before the meal.

veggie bites recipe | peri peri vegetable bites | veggie ball recipe with step by step photo and video recipe. certainly these are one of the healthy snacks you can offer to your kids who refrain from eating vegetables. while these are typically fired in round or ball shaped, but it can also deep fried in star or any desired shape to attract kids. also these veggie balls are stuffed with peri peri sauce which can also be extended to desi sauce (green chutney or red chutney) or simple chilli sauces.

while i started this recipe with the intention of preparing veggie nuggets which are typically in square or rectangle shape. however i also wanted to use the peri peri sauce as the spice mix with the mashed vegetables, hence i had to fall back to simple veggie ball recipe. also in this recipe i have used soaked channa or chickpea, very similar to falafel recipe, but can easily extended with other vegetables like potatoes or sweet potatoes. in addition these veggie bites can also be coated with bread crumbs. basically it helps to make it crispy at the outer layer very similar to veggie nuggets recipe.

peri peri vegetable bitesfurthermore some important tips and suggestions for a perfect peri peri vegetable bites recipe. firstly, i have added vegetables like carrot, corn, peas and chickpeas to make it perfect balanced veggie combination. having said that, it can be easily extend to any vegetables of your choice like potatoes, cauliflower or even beans. secondly, i have added combination of corn starch and bread crumbs to make it dry and less moisture. alternatively, you can add oats powder, rusk powder or even left over sandwich bread slices to make it dry. lastly, you can bake these veggie balls at 180 degree for 15 -18 minutes in a preheated oven.

Ingredients
  

  • 1 cup chana / chickpea, soaked overnight
  • 2 tbsp onion, finely chopped
  • 2 tbsp capsicum, finely chopped
  • ½ carrot, grated
  • 2 tbsp peas / matar
  • 1 tbsp corn
  • handful of coriander leaves
  • 1 tsp ginger-garlic paste
  • 2 tbsp corn flour
  • ½ tsp salt
  • 3 tbsp peri peri sauce
  • ½ cup bread crumbs
  • oil for deep frying

Instructions
 

  • firstly, take 1 cup soaked chana, 2 tbsp onion, 2 tbsp capsicum, ½ carrot, grated and 2 tbsp peas, 1 tbsp corn and handful of coriander leaves.
  • blend to coarse paste without adding any water.
  • further add 1 tsp ginger garlic paste, 2 tbsp corn flour and ½ tsp salt.
  • also add 3 tbsp peri peri sauce or alternatively use chilli powder, italian seasonings and aamchur.
  • combine well making sure the spices are mixed well.
  • further add ½ cup bread crumbs and combine well.
  • combine well to form a soft dough.
  • now grease hands with oil and prepare small balls.
  • deep fry the balls in hot oil or bake them in preheated oven at 180 degree celsius for 12 minutes.
  • stir occasionally and fry on medium flame.
  • fry till the veggie balls turn golden and crisp. drain off over kitchen paper to absorb excess oil.
  • finally, serve veggie balls with mayonnaise or tomato sauce.

notes:

  • firstly, do not add water while blending the vegetable mixture to coarse paste.
  • add bread crumbs accordingly, depending on the moisture present in vegetable paste.
  • additionally, add any vegetables of your choice to make veggie balls more healthy.
  • finally, veggie balls can also be used to prepare in wraps.

  1. May I refrigerate d ball before frying and fry it within 2 days or as per requirement? Will it become moist and get separated in hot oil?
