firstly, in a large bowl take 15 pieces of raw jackfruit. make sure to soak the jackfruit in saltwater soon after chopping to prevent discolouring. you can also use frozen or tin jackfruits.
CURD - HALF CUP
add ½ cup curd, ½ tsp chilli powder, ¼ tsp turmeric, 1 tsp kasuri methi, 1 tsp ginger garlic paste, ¼ tsp salt and ½ tsp garam masala.
MARINATE - 30 MINUTE
mix well and marinate for 30 minutes
OIL - 2 TBSP
now in a pan heat 2 tbsp oil and add marinated jackfruit
COOK - 5 MINUTES
fry on medium flame until the kathal is cooked well. keep aside
BAY LEAF - 2
in a large kadai heat 2 tbsp oil. add 2 bay leaf, 1 inch cinnamon, 4 pods cardamom, 7 cloves and 1 tsp cumin. saute until the spices turn aromatic.
ONION - 1 CHOPPED
further, add 1 onion and 1 tsp ginger garlic paste
in a large vessel take enough water and add spices
CHILL POWDER - 1 TSP
keeping the flame on low add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, ½ tsp cumin powder and ½ tsp salt.
saute until the spices turn aromatic.
ADD 3 -TOMATO
furthermore, add 3 tomatoes and cook well
SOFT & MUSHY
cook until the tomatoes turn soft and mushy
FRIED RAW JACKFRUIT
add in fried raw jackfruit (kathal) and mix well
WATER - 1 CUP
add 1 cup water and mix adjusting consistency as required
SIMMER - 5 MINUTES
cover and simmer for 15 minutes or until the jackfruits are cooked well and flavours are absorbed.
now add ¼ tsp garam masala and 2 tbsp coriander. mix well
READY TO EAT
finally, enjoy kathal ki sabji with roti or naan.
