PINEAPPLE JUICE

blend smooth making sure the chunks are ground well.

FILTER OUT

now strain the juice extracting the pineapple juice. you can alternatively take 3 cup pineapple juice here.

ADD CORNFLOUR

now add 1 cup cornflour to the pineapple juice and mix using a whisk.

ADD WATER

further, add 1 cup water and prepare a smooth consistency batter. keep aside.

in a large kadai take 2 cup sugar and 1 cup water.

SUGAR DISSOLLVES

stir well until the sugar dissolves and comes to a boil.

ADD PINEAPPLE MIXTURE

add in the prepared masala paste and cook for 2 minutes or until the raw flavour disappears.

MIX CONTIOUSLY

keep stirring continuously, keeping the flame on low to medium.

PASTE CONSISTENCY

after 5 minutes, the mixture will start to thicken.

FOOD COLOUR

add ½ tsp yellow food colour and give a good mix. food colour is optional, it makes the delight attractive.

the ghee is absorbed completely.

further, add 2 tbsp more ghee and continue to cook. i have used a total of 6 tbsp of ghee in batches.

finally, cucumber raita or kheera raita is ready to serve with pulao, biryani or paratha.
