i still remember my school days and especially the summer holidays. during my summer holidays, my uncle and aunt use to travel india from the uk and canada. well, i was really looking forward to meeting them but i was also eagerly waiting for the overseas chocolate bars from them. there were specific and particular bars which i was keen and interested in and bounty bars were one of them. being a south indian, coconut and coconut-based recipes and desserts were an integral part of our cuisine. but the chocolate coconut bars were something special. perhaps it was due to the moist coconut bars and the super creamy chocolate coating. maybe if it was just the coconut or even the chocolate bars, it may not have got the same attention. the combination of these 2 makes it more special and tastier.

furthermore, some more additional tips, suggestions and variants to the bounty chocolate recipe. firstly, i have used the combination of coconut, milk and sugar which is the ideal combination for this recipe. yet you may experiment with the recipe with coconut and condensed milk too. moreover, with condensed milk, you do not have to cook either. secondly, with the coconut mixture, you may add other flavouring agents too as an experiment. you may perhaps add, mango pulp, cherry pulp or any other tropical fruit flavour. lastly, for the chocolate coating, take high-quality milk chocolate cooking bars. do not try these with normal chocolates as they would not melt or coat properly.

Ingredients
 

  • cup milk
  • ¾ cup sugar
  • 2 cup coconut (desiccated)
  • ¼ cup cream
  • 300 grams milk chocolate

Instructions
 

  • firstly, in a large kadai take 1½ cup milk and ¾ cup sugar.
  • stir well and dissolve sugar completely.
  • now add 2 cup coconut and mix well.
  • further, add ¼ cup cream and mix well. adding cream makes the coconut layer creamy and tasty.
  • continue to cook on medium flame until the mixture starts to hold the shape.
  • now transfer the mixture to a plate and cool slightly.
  • take a ball sized mixture and shape it into bar shapes.
  • keep refrigerated for 1 hour or until it sets completely.
  • now prepare the melted chocolate by melting 300 grams of milk chocolate using the double boiler method.
  • keep stirring until the chocolate melts completely.
  • cool the melted chocolate slightly. if the chocolate is too hot then coconut bars will melt when dipped.
  • now dip the coconut bars into the melted chocolate and coat uniformly.
  • place into butter paper and mark 3 lines using a butter knife. 3 lines are marked to just mimic the store brought bounty bars.
  • refrigerate for at least 1 hour, so that the chocolate will set completely.
  • finally, enjoy homemade chocolate bounty bars for a week when stored in an airtight container.

  • also, to hasten the process of cooling in the refrigerator, you can deep freeze for 15 to 20 minutes.
