orange kulfi recipe | kulfi orange in orange shells | orange kesar pista kulfi with step by step photo and video recipe. kulfi recipes are one of the favourite dessert recipes from the indian ice cream categories. traditionally, it was just limited to kesar or pista flavour but has grown with so many other flavours with all the available flavours and taste. one such new version or new addition to this category is the orange flavoured kulfi known for its mix of flavour and the way it is shaped and frozen.

even though i am not a huge fan of ice cream or kulfi recipe, but i am flattered with this orange flavoured dessert. just the combination of the sweet and sour taste of orange when mixed with creamy kulfi texture, is just amazing and out of this world. moreover, when it is loaded or stuffed inside the orange cups, there is more addition of citrus juice to the creamy ice cream and thus making an enjoyable experience. basically, the whole kick is about the addition of citrus flavour to the creamy ice cream. in addition, when the cream is stuffed inside the orange cups, it makes it more attractive and presentable. especially when it served to the guests, it makes a perfect and surprising dessert recipe. having said that, if you are planning to make this in bulk, it is better to go with the kulfi moulds or cups for faster turnouts.

orange kulfi recipefurthermore, some more additional, tips, suggestions and variants to the orange kulfi recipe. firstly, try to pick and choose fresh and stiff oranges which would not easily lose their shape. especially while scooping out, a fresh one would still hold shape and also may not crumble while it is stuffed. secondly, you may follow the same procedure with other types of fruit too. you may stuff kulfi ice cream to mangoes, mandarin, melons etc. lastly, while freezing these oranges, try to fix the cap as much as possible without any gap. if you feel there is some gap, you may use cling wrap to cover it before freezing it.

Ingredients
  

  • 5 orange, navel
  • 1 litre milk
  • 1 cup milk powder, unsweetened
  • 1 cup cream
  • ½ cup sugar
  • ¼ tsp orange food colour
  • 2 tbsp cashew, chopped
  • 2 tbsp almonds, chopped
  • 2 tbsp pistachios, chopped

Instructions
 

  • firstly, take 5 navel orange and cut in such a way you get the orange mould and cap for setting the kulfi.
  • scrape the pulp out carefully without damaging the oranges. i have used navel oranges as they are seedless and are thought to be one of the world’s best-tasting oranges.
  • keep aside the mould and cap aside.
  • now in a large kadai take 1-litre milk, 1 cup milk powder and 1 cup of cream.
  • mix well making sure everything is well combined without any lumps.
  • stir continuously and get the milk to a boil.
  • simmer for 10 minutes, stirring in between or until the milk thickens slightly.
  • now add ½ cup sugar and ¼ tsp orange food colour.
  • mix well and boil for at least 10 minutes.
  • stir in between and cook until the milk thickens.
  • transfer the milk into a bowl and refrigerate for an hour.
  • after 1 hour the milk has thickened well.
  • now add 1 cup orange juice and pulp which we collected while scraping oranges to make moulds.
  • mix well forming a smooth consistency.
  • also add 2 tbsp cashew, 2 tbsp almonds and 2 tbsp pistachios.
  • mix well and the orange kulfi mixture is ready to set.
  • pour the kulfi mixture into the orange moulds. you can alternatively use any cups or kulfi mould to set the kulfi.
  • cover with the orange cap and freeze for at least 8 hours.
  • after 8 hours, the kulfi has set completely.
  • finally, cut into pieces of your choice and enjoy orange kulfi.

notes:

  • firstly, make sure to add orange juice after cooling the kulfi mixture completely, else there are chances for milk to curdle.
  • also, adding food colour is optional. i have added to give the orange colour.
  • additionally, in place of milk powder and cream you can replace them with 1 cup of khova.
  • finally, orange kulfi recipe tastes great as it has a mixed flavour of sweetness and sourness.
