as i was trying to explain, this is a cheat or a hack version of the traditional kulfi recipe. basically, when breadcrumbs or bread powder are added to boiling milk it thickens quickly as compared to the traditional continuous stirring method. as matter of fact, there are other cheat versions like no-cook or using condensed milk-based kulfi. but i personally feel the bread-based kulfi would offer the same taste as the traditional one. moreover, it is also a productive way of making kulfi with your leftover bread slices when time is critical. i personally make this often, especially when i have to prepare something creamy dessert recipe for my guests in quick time. i also noticed that it takes only a few hours to set as compared to the traditional one and hence an ideal contender for a quick turnaround.

furthermore, i would also like to highlight some more additional, tips, suggestions and variants to the bread kulfi recipe. firstly, i have used leftover bread sandwich based slices for this recipe. well, it is a bread-based dessert, but as an alternative, you can use bread crumbs, rusk powder too. secondly, you can follow the same procedure to prepare any type of flavoured kulfi recipe. you may add kesar, vanilla, chocolate, paan and even any tropical fruit essence as variants. lastly, if you do not have kulfi moulds, you may use glass or steel cups to shape this kulfi. but ensure to close it before it is frozen as it may become hard if it is open.

Ingredients
  

  • 3 slice bread, white/ brown
  • 1 litre milk
  • ¼ tsp saffron / kesar
  • ½ cup sugar
  • 4 anjeer, chopped
  • 2 tbsp almonds, chopped
  • 2 tbsp pistachios, chopped
  • ¼ tsp cardamom powder

Instructions
 

  • firstly, trim the sides of the bread and cut into pieces.
  • in mixi, using pulse mode powder into breadcrumbs. keep aside.
  • in a large kadai take 1 litre of milk and ¼ tsp saffron.
  • stir and get the milk to a boil.
  • once the milk comes to a boil add ½ cup sugar and 4 anjeer.
  • stir and boil making sure the sugar dissolves completely.
  • further, add prepared breadcrumbs and mix well.
  • continue to boil until the milk thickens. bread helps to thicken the milk and give a grainy texture like in malai kulfi.
  • now add 2 tbsp almonds, 2 tbsp pistachios and ¼ tsp cardamom powder.
  • mix well, pour the kulfi mixture into kulfi moulds. if you do not have moulds, you can pour until matka or glass cups.
  • cover and freeze for 8 hours or until sets completely.
  • after 8 hours, the kulfi has set completely and is ready to serve.
  • finally, garnish the bread kulfi with a few chopped almonds and enjoy.

notes:

  • firstly, adding kesar will enhance the flavour of kulfi. however, it is optional.
  • also, you can also add store-bought mawa to make the kulfi creamier.
  • additionally, keep stirring the milk to prevent burning.
