eggplant curries are always one of the favorite curries in my house. especially curries like baingan ka bharta or ennegayi is my all time favourite served with either jowar bhakri roti or simply with chapatis. while many people believe that, ennegayi is karnataka cuisine version of baingan ka bharta. however, these 2 are totally different curries and prepared in different ways. may be the confusion is due to the similarity of texture in both the curries.

Ingredients
for roasting brinjal:
  • 1 large brinjal / eggplant / baingan, purple coloured
  • 1 tsp oil
for baingan bharta:
  • 3 tbsp oil
  • ¾ tsp jeera / cumin seeds
  • 1 tsp garlic paste
  • 1 green chilli, finely chopped
  • 2 small onions, finely chopped
  • 2 small tomatoes, finely chopped
  • ¾-1 tsp kashmiri chilli powder, adjust according to your spice level
  • salt to taste
  • few coriander leaves, finely chopped
Instructions ( 1 cup =255 ml)
roasting baingan recipe:
  1. firstly, take a large eggplant and grease with a tsp of oil.
  2. furthermore, place on the stove and roast on low flame. keep turning in between.
  3. roast till brinjal shrinks releasing some water and skin has turned completely black. it will take about 20 minutes.
  4. allow to cool completely.
  5. slowly peel the skin of eggplant.
  6. also, cut the stem of brinjal.
  7. furthermore, mash the brinjal with a potato masher.

  1. firstly, in a large kadai, heat almost 3 tbsp of oil and splutter cumin seeds.
  2. in addition add garlic paste and chopped green chilli. and saute till the raw smell of garlic disappears.
  3. now add finely chopped onions and continue to saute till they change colour.
  4. furthermore, add chopped tomatoes and saute till they start releasing oil from sides.
  5. in addition, add red chilli powder and salt to taste. then give a quick mix.
  6. then add mashed eggplant and give a nice mix. also cook for 3-4 minutes on low flame.
  7. finally garnish with few coriander leaves.
  8. serve baingan bhartha with roti, garlic naan or rumali roti.

notes:

  • alternatively, you can use oven or grill to roast the eggplant / brinjal.
  • in addition, you can also add spices like coriander powder, turmeric.
  • however, baigan bhartha taste great when spices are less and smoky flavour is more.
  • moreover, adjust the quantity of onions and tomato according to your preference. i like to have more brinjal than onions and tomatoes.
