my husband is a big fan of dal. so whenever we go to indian restaurants we take dal tadka or dal fry. and now it has turned my favourite as well. it is very easy and simple to make. just follow the recipe to get authentic punjabi dal fry in your kitchen.

dal fry 1dal tadka and dal fry are two different dal preparations. i used to always get get confused seeing the menu. for dal tadka as the name suggest a tadka is poured on top of dal. but in dal fry they don’t do that.  you can also add some lemon juice and add coriander leaves before serving.

Ingredients
  • 1 bowl toor dal, pressure cooked
other ingredients:
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2 green chilies, finely chopped
  • 2-3 dry red chillies
  • few curry leaves
  • 1 inch ginger, finely chopped
  • 3 garlic, finely chopped
  • ½ tsp mustard seeds
  • 1 tsp cumin seeds / jeera
  • pinch asafoetida / hing
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp kasuri methi / dry fenugreek leaves
  • ½ tsp garam masala powder
  • 2 tbsp oil or ghee
  • few coriander leaves, chopped
  • salt to taste
  • 1 tsp lemon juice
Instructions ( 1 cup =255 ml)
  1. in a pan heat ghee and add the mustard, cumin, hing and fry them.
  2. in addition, add the onions and fry till they become transparent.
  3. furthermore, add the chopped ginger and garlic and fry for some seconds
  4. it is now time to add the green chilli, red chilies, curry leaves and give a good mix.
  5. after mixing it properly, add turmeric powder and red chilli powder. and fry for a minute.
  6. finally, add the tomatoes and cook till they soften and you see oil releasing from the sides.
  7. once the tomatoes are cooked, add 1 bowl of mashed toor dal.
  8. to maintain the consistency, add water and salt as required.
  9. stir and simmer the dal for 5-6 minutes more or till you get a smooth and slightly thick consistency.
  10. lastly add crushed kasuri methi leaves and garam masala powder.
  11. furthermore, add chopped coriander leaves add lemon juice.
  12. finally, serve dal fry hot with steamed basmati rice, biryani rice, jeera rice or coconut milk pulao.

  4. it is now time to add the green chilli, red chilies, curry leaves and give a good mix.

  5. after mixing it properly, add turmeric powder and red chilli powder. and fry for a minute. do not burn the spices.

  6. finally, add the tomatoes and cook till they soften and you see oil releasing from the sides.

  7. once the tomatoes are cooked, add 1 bowl of mashed toor dal. stir well.

  8. to maintain the consistency, add water and salt as required.

  9. stir and simmer the dal for 5-6 minutes more or till you get a smooth and slightly thick consistency.
  10. lastly add crushed kasuri methi leaves and garam masala powder. simmer for a minute.

  12. finally, serve dal fry hot with steamed basmati rice, biryani rice, jeera rice or coconut milk pulao. dal fry also goes well with rotis or naan.

notes:

  • firstly, you can combination of tuvar dal and masoor dal.
  • in addition,dal fry should not be thin in consitency, and has to be medium to thick consistency.
  • while serving top the dal fry with some ghee to enhance the taste.
  • finally, cook and mash the dal well to get nice creamy consistency.
