to be honest, garlic bread recipe should be my first recipe after i started cooking on my own during my college days. obviously, i started with store bought bread and i was very happy with the result. however, after i started to bake my own bread, i never turned back. especially, for cheesy garlic bread recipe, homemade bread is ideal as you can stuff the cheese accordingly. more importantly, you cannot compare the content you achieve with the homemade garlic bread recipe with store bought bread.

furthermore, some important tips and suggestions for a perfect garlic bread recipe. firstly, i have used dry yeast in this recipe, but you can also use baking soda and baking powder for this recipe. secondly, do not forget to add sugar to the yeast and warm milk mixture. sugar acts as a catalyst which kicks start the yeast fermentation process. always bake the garlic bread in a preheated oven. you can preheat the oven for 10 minutes and then continue with the baking process. lastly, you can totally skip the cheese part and to prepare simple garlic bread recipe.

Ingredients
for garlic bread dough:
  • ¼ cup warm milk
  • 1 tsp dry yeast / any yeast
  • 1 tsp sugar
  • pinch of salt
  • 3 cloves garlic, finely chopped
  • ¾ tsp oregano
  • 1 tsp unsalted butter, at room temperature
  • 1 cup plain flour / maida / all purpose flour
  • 2 tsp oil
for garlic butter:
  • ¼ cup butter, melted
  • 3 cloves garlic, finely chopped
  • 2 tbsp coriander leaves, finely chopped
other ingredients:
  • 3 tbsp plain flour / maida / all purpose flour, to dust
  • ¼ cup mozzarella cheese / any cheese of choice
  • 2 tsp chili flakes
  • 1 tsp oregano
  • 1 tsp mixed herbs
Instructions ( 1 cup =255 ml)

  1. firstly, in a large mixing bowl take warm milk, dry yeast and sugar. mix well.
  2. rest for 5 minutes.
  3. furthermore, add pinch of salt, garlic and oregano.
  4. additionally add butter and maida. start to knead the dough.
  5. further, coat the dough with oil and rest for 2 hours.

  1. further, punch the dough.
  2. in a small bowl mix in butter, garlic and coriander leaves.
  3. spread the prepared garlic butter over the dough generously.
  4. further top with mozzarella cheese on half of the dough.
  5. also season with chili flakes and oregano.
  6. fold the dough and seal the edges.
  7. furthermore, brush generous amount of prepared garlic butter.
  8. also top with chili flakes and mixed herbs.
  9. make marks over bread without cutting them fully.
  10. bake in preheated oven at 180 degree celsius for 15 minutes.
  11. cut the garlic bread into pieces and serve.

  5. after 4-5 minutes milk turns frothy indicating yeast has activated.

  7. also add garlic and oregano.

  9. later add maida and start to knead the dough.

  10. punch the dough well and knead to smooth and soft dough.

  13. cover and rest the dough in warm place for 2 hours.

  1. after 2 hours, we can see the dough has raised and doubled in size.

  2. further, punch the dough to remove the excess air incorporated in the dough.

  3. dust little maida on working station and further knead for a minute.

  4.  tuck the dough to form a ball.

  5. and later gently pat to form a oval shape.

  6. also prepare the garlic butter. in a small bowl mix in butter, garlic and coriander leaves.

  8. further top with generous amount of mozzarella cheese on half of the dough.

  • firstly, use warm water or milk to soak yeast.
  • also make sure to rest the dough for minimum of 2 hours.

  • additionally, add more italian seasonings to make it more flavourful.

  1. Hi can u tell me why my yeast did not get activated at all..I used the active dry yeast but it was granulated so I powdered it and added it in warm milk with 1 tsp sugar for making garlic bread. Please help as it is my first trial with yeast..

    I have Ifb microwave + convection oven. I use convection mode to bake. Please tell me what is the time and temperature to be used in this kind of oven. Also please tell me if I’ve to use high raised container/container which sits on turntable in oven to bake properly.

    • use convection mode to bake and bake in the same temperature as mentioned… however, i suggest you to use turnable stand to bake uniformly in microwave…

  8. “is it really homemade” was the response from my family after baking. texture was too good. I got the colour after baking it for 5 more minutes at 200°c. but don’t know why salt was almost nill. according to recipe only a pinch of salt is used in the dough and nowhere else.

  11. Hi, I tried garlic bread recipe but it didn’t get cook in temperature you said. It turned out very hard from top and bottom both. 1/4th cup milk was also not sufficient for kneading soft dough. Please don’t take my words otherwise, I just want to clear my doubts. Thanks.

    • generally 24-48 hours should be fine. But make sure you wrap the dough in a cling wrap and then refrigerate it. otherwise it may raise and become hard.

  12. Made it twice last week but the dough didnt rise as much as urs. Also the smell of yeast is really strong and you can taste it. Please suggest some alternative.

  13. Hi..Ur recipe is very helpful for me to making bread and garlic bread.. Recently I made all two..Exact measurements nice risen up,nice smell of flavor..I want to know about the correct temp in OTG and in convection..As I have Samsung microwave oven..I baked bread on 140degree for 30-35 min till become brown..But it was very light brown..It was soft and fully baked..But color was very light.. Garlic bread I baked in convection at 180 degree for first 15 min but it was whitish so I baked for another 15 min total 30 min…It become crispy taste was good but inside cheese was not in melting position it was chew ..So how do we know that the bread is baked or not

    Another easy and tasty recipe. Thank you 🙂 I used water along with milk to kneed dough as only milk was not enough. I used 15 minutes preheated at 220 deg oven and baked for the same time and Temp. It came out well.

    • nope saranya. resting it for overnight may turn it hard. however you can keep it in fridge but covered fully in a cling wrap.

  15. Hi, thanks for posting this recepie. I tried step by step instructions but my dough didn’t rise that well. It wasn’t double in size. I didn’t use a cling sheet but simply covered it with a vessel was that the reason? Is it also because it’s winters and it wasn’t warm enough for the dough to rise that well

    • wow that was new. thanks for trying with wheat. between just under curiosity, did you alter any other ingredients or just replaced wheat with maida/plain flour?

  16. This came out YUM!! Couldn’t believe that we can get the dominos taste at home. The only difference I found is that I used a microwave in convection mode and the bread didn’t get cooked even after 25 mins. So turned up the heat to 210 and cooked for 15 more minutes. Dont know if it has got anything to do with the fact that i didn’t have any butter at home and used ghee instead.

    It really nice recipe.. my batter was all well as u suggested even taste waas also good.. but it s not baked properly..
    It was very hard . I tried twice but no result.
    dont know that yeast was in less quantity or its microwave fault..
    I am using whirlpool magicook. preheated 200 deg and cooked for same ti,e and tem but it was not baked .. 🙁
    I am very sad .. it was my frst try after marriage

      yeast plays a major role in preparing bread… try to get a good quality dry yeast and also knead the dough to really soft and allow to rise well..
