indo chinese recipes have always been my all-time favourite snack meal recipe. it is mainly due to the combination of flavour and taste it has to offer in each bite. the main reason to mention about indo chinese in this south indian recipe post is to acknowledge the fact that, it has been derived from it. generally, indian cuisine does not use cornflour in its snacks recipes. but this recipe does use cornflour to get the crisp texture, very similar to indo chinese. later it is used in a south indian tadka which makes it unique and native to south india. in other words, the combination of onions, garlic and fresh herbs makes it native to south india.

Ingredients
  

for crispy gobi:

  • 2 cup gobi / cauliflower, florets
  • 1 tsp salt
  • hot water, for blanching
  • 1 cup maida
  • ¾ cup corn flour
  • ¼ tsp turmeric
  • ½ tsp pepper powder
  • ½ tsp salt
  • 1 cup water, for batter
  • oil, for frying

for pepper fry:

  • 2 tbsp oil
  • ½ tsp cumin
  • ½ tsp fennel / saunf
  • few curry leaves
  • 1 onion, finely chopped
  • 5 clove garlic, crushed
  • 1 inch ginger, chopped
  • ½ capsicum, finely chopped
  • ¼ tsp turmeric
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp pepper powder
  • ½ tsp salt
  • 2 tbsp tomato sauce
  • 2 tbsp coriander, finely chopped

Instructions
 

  • firstly, in a large bowl take 2 cup gobi. make sure to take the florets of the same size.
  • now add 1 tsp salt and pour hot water.
  • soak for 5 minutes, or until the gobi is blanched slightly.
  • drain off and keep aside to cool completely.
  • in a bowl take 1 cup maida and ¾ cup corn flour.
  • also add ¼ tsp turmeric, ½ tsp pepper powder and ½ tsp salt.
  • adding 1 cup water, mix well using a whisk making sure there are no lumps.
  • now add blanched gobi and coat well with batter.
  • deep fry in hot oil, keeping the flame on medium.
  • stir occasionally, making sure to fry uniformly.
  • fry until the gobi turns golden brown and crisp. you can double fry for a crunchier bite.
  • drain off making sure to get rid of excess oil. keep aside.
  • in a large wok, heat 2 tbsp oil. add ½ tsp cumin, ½ tsp fennel and few curry leaves.
  • splutter until the spices turn aromatic.
  • now add 1 onion, 5 clove garlic and 1 inch ginger. stir fry on high flame.
  • further, add ½ capsicum and stir fry until it turns crunchy.
  • add ¼ tsp turmeric, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp pepper powder, ½ tsp salt and 2 tbsp tomato sauce.
  • stir fry on high flame until the spices are well combined.
  • add in fried gobi and mix gently. do not overcook as gobi will lose its crunchiness.
  • finally, and 2 tbsp coriander leaves and enjoy crispy gobi pepper fry.
