probably, i started to love palak paneer recipe during my college days. since i come from a south indian family, north indian curries or gravy’s are rarely prepared in house. consequently, my desire to north indian curries and dishes was increasing day by day. once i started with the colleges, my lunch was always in north indian restaurants and palak paneer was always on the menu. in addition, i use to also order, palak paneer biryani which was stir fried with other vegetables too.

furthermore, i always prepare paneer at home for all the paneer dishes. since, the store brought paneer contains preservatives and chemicals for softening and longer shelf life. moreover, homemade paneer delivers amazing palak paneer recipe with soft and tender paneer. also, to get dark green colour of palak paneer you need to be careful while blanching palak leaves. just follow my recipe to get bright green colour in your palak paneer. certainly, you can easily compare this recipe to restaurant style palak paneer.

Ingredients
for the palak puree:
  • spinach / palak 1 bunch
  • green chilli 1
  • garlic cloves 1
  • ginger 1 inch
for the palak curry:
  • butter / ghee - 2 tsp
  • tej patta / bay leaf -1
  • cumin seeds - 1 tsp
  • onion, 1 finely copped
  • tomato, 1 finely copped
  • garlic cloves, 1 finely copped
  • turmeric powder ½ tsp
  • red chilli powder ½ tsp
  • garam masala powder ½ tsp
  • paneer cubes 10
  • salt to taste
garnish:
  • cooking cream
Instructions ( 1 cup =255 ml)
making the palak (spinach) puree:
  1. boil water and add bunch of palak leaves separating stems.
  2. once the palak changes its colour immediately add the palak leaves containing ice cold water.
  3. now make a puree of palak adding ginger, garlic and green chilli.
  4. keep the spinach puree aside.
making the palak gravy:
  1. heat oil/ghee/butter in a pan.
  2. add the cumin seeds and bay leaf.
  3. now add the finely chopped onions and garlic.
  4. add the finely chopped tomatoes.
  5. now add the palak pure and stir well.
  6. add water as required adjusting the consistency.
  7. then add the turmeric powder, red chilli powder and salt.
  8. simmer for 5 minutes. palak has to cook and thicken.
  9. stir well and add fried paneer cubes / tofu if you are vegan.
  10. also remeber to add garam masala powder.
  11. cook for a minute or 2.
  12. now add a tsp or more of cream and also drizzle a few drops of lemon juice before serving palak
  13. serve the palak paneer with roti or chapathi.

  2. add the cumin seeds and bay leaf. fry for a minute.

  4. add the finely chopped tomatoes. stir and saute till the tomatoes they soft.

  5. now add the palak pure and stir well.

  6. add water as required adjusting the consistency. stir again and boil for 3 minutes.

  7. then add the turmeric powder, red chilli powder and salt.

  8. simmer for 5 minutes. palak has to cook and thicken. stir in between.
  9. stir well and add fried paneer cubes / tofu if you are vegan.

notes:

  • first of all, wash your palak leaves well in running water before you blanch them.
  • in addition, instead of blanching palak, you can also saute palak on a medium heat.
  • furthermore, add cashews while blending to get rich creamy texture.
  • finally, in restaurants, they do add cream or cashew milk.

    • it might be because of your palak leaves getting overcooked. Remove the spinach from the heat as soon as the leaves begin to wilt.
