i prepare veg fried rice with the left over rice usually. to be honest, left over rice are ideal for veg fried rice recipe. basically, the moist content of the rice are dried up and is ideal for fried rice recipe. otherwise, if you use hot steamed rice, then you would end up with sticky and mushy fried rice. but still you can prepare fried rice from freshly prepared rice too. just keep the freshly prepared rice in a open plate to cool down for 30 mins.

furthemore, fried rice recipe is the most loved rice recipe in my house. fried rice is my dads favourite food. i enjoy having fried rice in indian restaurants with veg manchurian,  dal tadka or dal fry. i am not a big fan of indo chinese menu. however i love gobi manchuriaschezwan noodlesschezwan fried rice and hot and sour soup. remember not to over cook the rice, they have to be separate or just cooked.

Ingredients
  • 1 bowl basmati rice, cooked
  • 3 - 4 tsp of oil
  • 2 spring onion, finely chopped
  • ½ carrot, finely chopped
  • 1 capsicum, finely chopped
  • 4-5 french beans, finely chopped
  • ¼ cup peas, fresh / frozen
  • 3 to 4 garlic, finely chopped
  • ½ inch ginger, finely chopped (optional)
  • 3 tsp soy sauce
  • 3 tsp vinegar
  • 1 tsp black pepper
  • salt to taste
Instructions ( 1 cup =255 ml)
  1. firstly, heat oil in a wok or a pan. add 3-4 tsp of oil.
  2. additionally, add black pepper and garlic. saute for few seconds.
  3. also add the spring onions and saute for about 2 minutes.
  4. furthermore, add capsicum and fry for a minute.
  5. then add all the finely chopped veggies.
  6. repeatedly stir and toss the vegetables so that they are cooked well. add some salt while cooking vegetables.
  7. the vegetables should be almost cooked. then add the 3 tsp of soy sauce.
  8. also add 3 tsp of vinegar.
  9. furthermore, add almost cooked rice. i have added pinch of salt and 1 tsp of oil while cooking rice.
  10. also add crushed black pepper after adding cooked rice.
  11. furthermore, fry for a few minutes till the rice and vegetables mix well. make sure you do not add more salt as soya sauce has salt content.
  12. finally, serve the veg fried rice hot plain or with dal tadka or veg manchurian gravy.
