as i was explaining, vegetable-based halwa’s are very common but using a potato can be new for many. we generally prepare halwa from carrot, bottle gourd, pumpkin, and cucumber as it easily caramelizes with sugar to form an amazing dessert. but it can also be made with another vegetable too. these are purpose-based halwa and the most popular one is the potato halwa. these are super rich in carbs/starch and when mixed with sugar supplies an abundance of glucose to the body. hence it is mainly served during the fasting season and hence also known as fasting dessert. it can also be served in winter to overcome the cold weather but may not be limited to one particular season and can be made throughout the year for any occasion.
furthermore, some more additional tips, suggestions, variations to the creamy aalu ka halwa recipe. firstly, i would heavily recommend using mash suitable aloo or potatoes for this recipe. you do get different types of potatoes in the market like chips, salad, etc, but may not be suitable for this recipe. secondly, potato as an individual has a strong flavour and characteristic which may not be suitable for a dessert. hence to suppress this, you may have to be very generous with the sugar and ghee to balance out the flavour. lastly, the dessert is always served warm and may have to be reheated before serving. especially if it is kept in the fridge, the ghee may have solidified and hence has to be warmed to liquidity it.

Ingredients
- 5 potato / aloo
- ½ cup ghee / clarified butter
- 1 cup sugar
- ¼ tsp saffron food colour
- ¼ tsp cardamom powder
for roasting dry fruits:
- 1 tbsp ghee
- 2 tbsp raisins
- 2 tbsp cashew, chopped
- 2 tbsp almonds, chopped
Instructions
- firstly, in a pressure cooker take 5 potatoes and pressure cook for 5 whistles.
- peel the skin of the potato and grate. keep aside.
- in a large kadai heat ½ cup ghee and add boiled and grated aloo.
- saute for 5 minutes or until the aloo changes colour slightly.
- now add 1 cup sugar and ¼ tsp saffron food colour.
- continuously stir keeping the flame on medium. sugar starts to melt.
- cook on medium flame until the ghee separates. it takes approximately 15 minutes for ghee to ooze out.
- the halwa will start to hold shape releasing ghee. this is the perfect consistency we are looking for.
- in a pan heat 1 tbsp ghee. add 2 tbsp raisins, 2 tbsp cashew and 2 tbsp almonds.
- roast on low flame until the nuts turn golden brown and crisp.
- transfer the roasted nuts over the halwa, add ¼ tsp cardamom powder and mix well.
- finally, enjoy aloo ka halwa topped with more dry fruits.

notes:
- firstly, make sure to boil the aloo really well, else the halwa will take a long time to cook.
- also, note that the aloo will absorb all the ghee while roasting and after some time it starts to release out the ghee. make sure to roast until then.
