bengali recipes are almost synonymous to milk based desserts or sweets like rasgulla or rasmalai recipes. with respect to rasmalai, there are several variations to it and eggless milk powder rasmalai recipe is one such easy variations. basically in this recipe the milk powder is used to prepare instant peda which is then served with sweetened evaporated milk with dry fruits. however, this recipe is eggless version and generally rasmalai recipe with milk powder is prepared with egg which helps to hold the shape of milk peda. having said that this recipe is a eggless version.
furthermore, some important tips and recommendations for a perfect rasmalai recipe with milk powder. firstly, i have used the full cream milk powder to prepare the peda and i would heavily recommend to use the same. also while preparing the peda, make sure to mix it in a low flame. secondly, do not boil the peda in hot rabdi, otherwise the peda may dissolve by loosing it shape. lastly, after adding the rabri to milk peda, rest it for 30 minutes before serving.

Ingredients
for rabri / rabdi:
- 4 cup milk, full cream
- ½ tsp cardamom powder
- few threads saffron / kesar
- ¼ cup sugar
- 2 tbsp dry fruits, chopped
for milk powder rasmalai:
- 1 cup milk powder, full cream
- 2 tbsp sugar, powdered
- ¼ cup milk
- ½ tsp ghee / clarified butter
Instructions
- firstly, prepare the rabdi by boiling 4 cup milk.
- stir occasionally, to prevent milk from burning at the bottom.
- now add ½ tsp cardamom powder and few threads saffron.
- also add ¼ cup sugar. add more sugar if required.
- stir well and simmer for 5 minutes.
- scrape off the cream from sides and allow milk to thicken.
- add in 2 tbsp dry fruits like cashew, almonds and pistachios.
- simmer for another 5 minutes stirring occasionally.
- finally, the rabri is ready once the milk thickens. keep aside.
- prepare the rasmalai from milk powder by taking 1 cup milk powder in a large kadai.
- add in 2 tbsp powdered sugar and ¼ cup milk.
- kepping the flame on low, stir continuously till the milk combines well with milk powder.
- scrape from bottom till the milk thickens and no lumps present.
- now add ½ tsp ghee and mix well.
- mix till the mixture starts to separate from the pan and forms a lump.
- further, grease hands with ghee and prepare small balls and flatten.
- finally, pour rabdi and serve instant milk powder rasmalai.
how to make eggless milk powder rasmalai with step by step photo:

notes:
- firstly, adjust the consistency of rabdi to your preference.
- also if you are looking of preparing rasmalai from chenna look at traditional rasmalai recipe.
- additionally, cook the rasmalai on low to medium flame to avoid from burning.
- finally, instant milk powder rasmalai taste great when served after 30 minutes, as it absorbs rabri.
