Ingredients
for besan coated masala kaju:
- 1 cup kaju / cashew, whole
- ¼ cup besan / gram flour
- 2 tbsp rice flour
- ½ tsp turmeric / haldi
- 1 tsp kashmiri red chilli powder / lal mirch powder
- ½ tsp chaat masala
- pinch of hing / asafoetida
- ½ tsp salt
- 2-3 tbsp water, to coat
- oil for deep frying
for chilli coated masala kaju:
- 1 tbsp ghee / clarified butter
- ½ tsp kashmiri red chilli powder / lal mirch powder
- 1 cup kaju / cashew, whole
- ¼ tsp turmeric / haldi
- ½ tsp salt
Instructions
besan coated roasted cashew nut recipe:
- firstly, mix cashew along with besan, rice flour, spices and salt.
- now add 2 tbsp of water and mix till the besan batter gets coated well to cashew.
- drop the besan coated cashew one by one into medium hot oil.
- stir occasionally and fry till cashew turn crunchy.
- also fry few curry leaves till it turns crisp.
- finally, mix curry leaves along with roasted cashew and masala cashew is ready to serve.
spiced roasted cashew nuts recipe:
- firstly heat 1 tbsp ghee and roast in 1 cup cashew nuts to golden brown.
- add in ½ tsp chilli powder, ¼ tsp turmeric and ½ tsp salt.
- mix well till the spices get coated well.
- finally, serve spiced roasted cashew nuts.
how to make roasted cashew nuts with step by step photo:
besan coated roasted cashew nut recipe:
- firstly, in a large mixing bowl take 1 cup cashew. use fresh cashew else it will not turn turn crunchy.
- add in ¼ cup besan, 2 tbsp rice flour, ½ tsp turmeric, 1 tsp chilli powder, ½ tsp chaat masala, pinch of hing and ½ tsp salt.
- combine well making sure all the spices and flour are mixed well.
- now add 2 tbsp of water and mix.
- add more water if required and combine till the besan batter gets coated well to cashew.
- drop the besan coated cashew one by one into medium hot oil.
- stir occasionally and cook on low-medium flame.
- fry till the cashew turns golden brown and crunchy.
- drain over kitchen absorbent paper.
- also fry few curry leaves till it turns crisp. be careful as moisture in curry leaves may splutter oil.
- finally, mix curry leaves along with roasted cashew and masala cashew is ready to serve.
spiced roasted cashew nuts recipe:
- firstly heat 1 tbsp ghee on low flame.
- roast in 1 cup cashew nuts on low flame stirring continuously.
- keep roasting till cashew nuts turn golden brown from all sides.
- now transfer the roasted cashew nuts over a kitchen paper to absorb excess oil.
- when cashews are still hot, add in ½ tsp chilli powder, ¼ tsp turmeric and ½ tsp salt.
- mix well till the spices get coated well.
- finally, serve spiced roasted cashew nuts or store in an airtight container for a month when cooled completely.
notes:
- firstly, use fresh cashew for more crunchy masala kaju.
- also make sure to separate the besan coated kaju and then deep fry, else it will stick to each other even after fried.
- additionally, instead of ghee you can also use oil. however ghee adds more flavour.
- finally, store masala kaju / spicy masala cashew in airtight container for a month when cooled completely.
