I have tried to cover most of the instant recipe versions, but somehow I came across this version of the masala paniyaram recipe. The beauty of this recipe is that it is both instant and a complete package. This recipe does not require any additional side dish, as it already contains all the necessary spices and masala. Hence, it can be an ideal recipe if youโ€™re running late in the morning and need something healthy and instant. You can further enhance this recipe by adding grated vegetables, such as beetroot, or finely chopped beans, perhaps very much like an uttapam recipe, but with a smaller size.

Masala Paniyaram Recipe

This instant masala paniyaram recipe is straightforward and quick, but here are some tips and suggestions to make it perfect. Firstly, the recipe does not involve a fermentation process; hence, I have added Eno fruit salt to achieve puffiness. It can be replaced with baking soda for the same purpose, but Eno salt is a better option.ย Secondly, theย masala appe must be served immediately once it is prepared, and it should still be warm. Otherwise, it can become soggy when cooled. Lastly, the recipe does not require any additional side dish, as it already contains all the necessary ingredients. However, it tastes great with the tangy and spicy chutney, such as onion chutney or tomato chutney.

Ingredients
  

  • 1 cup rava
  • ยพ cup curd
  • 1 tsp salt
  • 1 cup water
  • 2 tbsp oil
  • 1 tsp mustard
  • ยฝ tsp cumin
  • ยฝ tsp chana dal
  • ยฝ tsp urad dal
  • pinch hing
  • few curry leaves
  • ยฝ onion, finely chopped
  • ยฝ carrot, chopped
  • ยฝ capsicum, chopped
  • 2 tbsp sweet corn
  • 2 tbsp coriander, chopped
  • 1 inch ginger, grated
  • 2 tbsp coconut, grated
  • ยฝ tsp eno fruit salt

Instructions
 

  • Firstly, in a bowl takeย 1 cup rava, ยพ cup curd, 1 tsp salt and 1 cup water.
  • Mix well, ensuring everything is thoroughly combined. Rest the batter for 15 minutes.
  • In a pan, heatย 2 tbsp oil. Add 1 tsp mustard, ยฝ tsp cumin, ยฝ tsp chana dal, ยฝ tsp urad dal, a pinch of hing, and a few curry leaves.ย Splutter the tempering.
  • Add ยฝ onion and sautรฉ untilย the onion softens.
  • Transfer the tempering to the rava mixture.
  • Also, add ยฝ a carrot, ยฝ a capsicum, 2 tablespoons of sweet corn, 2 tablespoons of coriander, 1 inch of ginger, and 2 tablespoons ofย coconut.
  • Mix well, adjusting the consistency.
  • Furthermore, add ยฝ tsp of Eno fruit salt and 2 tbsp of water. Alternatively, you can use baking soda.
  • Mix gently to form a frothy batter.
  • Heat the appe pan and add oil to each mould.
  • Once the pan is hot enough, add in the prepared rava batter.
  • Cover and simmer for 5 minutes.
  • Roast on low to medium flame until the appe turns golden brown.
  • Flip over and cook both sides.
  • Finally, enjoy Masala Paniyaram with chutney.
