hung curd paratha recipe | dahi paneer paratha | aloo dahi paratha with a detailed photo and video recipe. a unique stuffed indian flatbread recipe with hung curd, paneer and boiled potato stuffing. commonly the paratha stuffing is filled with different types of vegetable stuffing and thus making a complete meal. but it can also be made with other wet ingredients and dahi or curd is one such option.

hung curd paratha recipe | dahi paneer paratha | aloo dahi paratha with step by step photo and video recipe. paratha recipes are one of the staple food for many indians. it is generally served for morning breakfast, but can also be served for lunch and dinner. generally, these are stuffed with boiled and spiced veggies, but can also be made with other ingredients like hung yoghurt, and making a creamy and filling flatbread.

last year i had posted the more popular dahi paratha recipe, where i had added the sour yoghurt directly into the dough. in other words, there weren’t any stuffing in the flatbread and the spice powders were added to the dough. however, i wanted to post a paratha recipe with thick curd as one of the stuffing. however, the water within the yoghurt would break the wheat-based covering and hence was not an option. therefore, i prepared hung curd by removing all the water in it. moreover, i mixed the hung curd with grated potatoes and paneer which helps to absorb any left out moisture but retaining the creaminess and goodness of curd. you may also use other vegetables, but i personally recommend to use this combination.

dahi paneer parathafurthermore, i would add some more tips, suggestions and variations to stuffed dahi paratha recipe. firstly, i have used only wheat flour to prepare the dough. but you may also extend it by adding the equal proportions of wheat and plain flour. plain flour helps to give nice texture and colour to the paratha. secondly, by adding hung curd, grated paneer and potatoes, the paratha becomes very filling. hence you may skip paneer or potatoes added to hung curd and it should be more than sufficient to absorb the moisture. lastly, the paratha tastes amazing when served hot or warm. it may turn soggy due to the hung curd and hence better to serve immediately.

Ingredients
  

for stuffing:

  • 3 cup curd
  • 1 cup paneer / cottage cheese, grated
  • 1 cup potato / aloo, boiled & mashed
  • 1 chilli, finely chopped
  • 1 tsp ginger paste
  • 2 tbsp coriander, finely chopped
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • ½ tsp garam masala
  • ½ tsp cumin powder
  • 1 tsp aamchur
  • ½ tsp carom seeds / ajwain
  • 1 tsp kasuri methi
  • ½ tsp salt

for dough:

  • 2 cup wheat flour / atta
  • ½ tsp salt
  • water, for kneading
  • 2 tsp oil

other ingredients:

  • wheat flour, for dusting
  • oil or ghee, for roasting

Instructions
 

paratha dough preparation:

  • firstly, in a large bowl take 2 cup wheat flour and ½ tsp salt. mix well.
  • now add water and knead the dough.
  • knead to a smooth and soft dough adding water as required.
  • further add 2 tsp oil and knead the dough.
  • knead to super soft dough. cover and rest for 20 minutes.

dahi paneer stuffing:

  • firstly, to prepare hung curd, place a clean cloth over sieve or colander.
  • pour 3 cup thick curd and tie tight.
  • refrigerate and rest for 5 hours or until all the water drops off.
  • now take the thick hung curd into large bowl. you can alternatively use 1 cup store brought hung curd.
  • add 1 cup paneer, 1 cup potato, 1 chilli, 1 tsp ginger paste and 2 tbsp coriander.
  • also add ½ tsp turmeric, 1 tsp chilli powder and ½ tsp garam masala.
  • further add ½ tsp cumin powder, 1 tsp aamchur, ½ tsp ajwain, 1 tsp kasuri methi and ½ tsp salt. mix well.
  • mix well forming a soft dahi paneer stuffing mixture. keep aside.

dahi paneer paratha preparation:

  • firstly, pinch a ball sized wheat dough and dust with some wheat flour.
  • further, roll it in a circle of about 5 to 5.5 inches in diameter.
  • place a ball sized prepared dahi paneer stuffing in the centre.
  • take the edge and start pleating bringing to the centre.
  • also join the pleats together and secure tight pinching off excess dough.
  • sprinkle some wheat flour and roll slightly thick.
  • on a hot tawa place the rolled paratha and cook for a minute.
  • furthermore, flip the paratha when the base is partly cooked (after a minute).
  • also brush oil / ghee and press slightly. flip again once or twice till both the sides are cooked properly.
  • finally, serve hot dahi paneer paratha with sauce, raita or pickle.

  • additionally, recommend roasting the paratha in ghee for better flavour.
  • finally, dahi paneer paratha recipe tastes great when prepared with fresh paneer and curd.
