One such Bhurji variant is the Amritsari Paneer Bhurji recipe known for its blend of spices and super creamy and rich flavors.
I have posted the paneer Bhurji gravy recipe but this recipe is an extension. If you have noticed it the gravy is prepared with yogurt. This adds the sour and creaminess to the gravy texture. In addition, I have also added besan to the gravy base. Adding besan or chickpea flour makes the gravy bland; hence, the preparation takes more spices and salt to make it lip-smacking. In addition, besan helps to give a silky smooth texture to the gravy and thus visibly attractive. Generally in the street, the gravy-based Bhurji is served with sandwich or pav bread. But it is not limited to it. I feel it tastes great with garlic naan, kulcha, or tandoori roti but it depends upon individual preferences.
Furthermore, some additional tips, suggestions, and variants to the Amritsari paneer Bhurji recipe. Firstly, adding yogurt is mandatory for street-style Bhurji. However, ensure it is fresh less sour, and thick in texture. This would help to make the gravy more creamy, and rich with balanced flavors. Secondly, use long shaped grate to grate the paneer. Avoid using fine grate as the paneer may get dissolved in the gravy base and you may not get the paneer texture. Amritsari Paneer Bhurji Recipe | Street Style Paneer Bhurji Gravy
Ingredients
- 2 tbsp besan
- ¾ cup curd
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tsp chaat masala
- 1 tsp pav bhaji masala
- 2 tbsp oil
- 1 tbsp butter
- 1 tsp cumin
- 1 tbsp kasuri methi, crushed
- 5 cloves garlic, chopped
- 1 onion, sliced
- ½ tsp turmeric
- 1 tsp chilli powder
- 2 tomato, sliced
- ¾ cup milk
- 200 grams paneer, grated
- 1 tsp salt
- 1 chilli, chopped
- 2 tbsp coriander, chopped
Instructions
- Firstly, in a thick-bottomed pan dry roast 2 tbsp besan on low flame until it turns aromatic and golden brown.
- Transfer the roasted besan to a bowl and allow to cool completely.
- Now add ¾ cup curd, 1 tsp coriander powder, 1 tsp garam masala, 1 tsp chaat masala, 1 tsp pav bhaji masala.
- Mix well making sure everything is well combined. Keep aside.
- In a large kadai heat 2 tbsp oil, 1 tbsp butter, 1 tsp cumin, and 1 tbsp kasuri methi. saute on low flame until the spices turn aromatic.
- Add 5 cloves garlic, and 1 onion and saute well.
- Keeping the flame on low add ½ tsp turmeric, 1 tsp chilli powder, and saute until the spices turn aromatic.
- Furthermore, add 2 tomatoes and saute making sure the tomato turns mushy.
- Now add the prepared besan curd mixture and cook well.
- Cook until the mixture separates the oil from it.
- Also, add ¾ cup milk and mix adjusting the consistency as required.
- Add 200 grams paneer, 1 tsp salt, and mix well. Cook for 1 minute or until the paneer is well cooked.
- Now add onion, tomato, 1 chilli and mix well. Do not cook as the crunch of the onion will be lost.
- Finally, add 2 tbsp coriander and enjoy Amritsari Paneer Bhurji Recipe with bread.

- Firstly, make sure to add milk as it makes the bhurji rich and creamy.
