Pulao, or flavoured rice, is perhaps one of the favourites and popular Indian lunch box recipes. It is generally prepared with rice and vegetables, with an individual vegetable or herb treated as a hero ingredient. One such simple and tasty pulao recipe is the capsicum pulao recipe.

I have posted several pulao or flavoured rice recipes, yet I get a lot of requests for some tasty and interesting pulao recipes. I have posted several flavoured vegetable rice recipes, but this has to be one of the loaded pulao recipes. This recipe is capsicum and potato vegetable-flavoured pulao but contains herbs, coconut grate, garlic and ginger. With all these combinations, it makes one of the flavoured pulao recipes. Moreover, it is prepared in a pressure cooker, making cooking even more straightforward. All the vegetables, rice and masala are added to the pressure cooker, and the pulao is prepared in 2 whistles. I generally make this for my husbandโ€™s lunch box recipes, which can also be used for lunch and dinner. Try this recipe once, and let me know your thoughts.

Firstly, I prepared this rice pulao recipe with Sona Masuri, which is the perfect choice for this pulao. However, you may also try this recipe with basmati or long-grain rice, which should taste equally good. Secondly, the flavoured bath is always served with spicy coconut chutney and curd raita, but that is not mandatory. Perhaps you can also serve it with spicy curry, rasam, dal or even sambar. Lastly, the rice and water proportion used for this recipe are specific to Sona Masuri rice. If you plan to use basmati, you may have to reduce the water quantity by a 1:2 ratio.

About Capsicum Rice

It is one of the popular South Indian-flavoured rice recipes, made with assorted spices, long-grain rice, and a generous amount of ripe capsicum. Capsicum Rice or capsicum pulao bath is a typical breakfast or lunch box recipe in South India. The recipe contains all the required spices and requires no additional sides. Ingredients
  

for masala powder:

  • 2 tbsp peanut
  • 2 tbsp sesame
  • 1 tsp cumin
  • ยฝ tsp coriander seeds
  • ยฝ tsp urad dal
  • ยฝ tsp chana dal

for rice:

  • 2 tbsp oil
  • 1 tsp mustard
  • ยฝ tsp cumin
  • 2 dried red chilli
  • pinch hing
  • few curry leaves
  • 1 onion, sliced
  • 1 capsicum, sliced
  • ยฝ tsp turmeric
  • 1 tsp chilli pwoder
  • ยฝ tsp garam masala
  • 1 tsp salt
  • 4 cup cooked rice
  • 2 tbsp coriander, chopped
  • ยฝ lemon juice

Instructions
 

  • Firstly, dry roastย 2 tbsp peanut till they turn crunchy.
  • Addย 2 tbsp sesame, 1 tsp cumin ยฝ tsp coriander seeds, ยฝ tsp urad dal, and ยฝ tsp chana dal.
  • Dry roast on low flame till the spices turn aromatic.
  • Cool completely, and grind to a fine powder. Keep aside.
  • In a large kadai heat 2 tbsp oil. Splutter 1 tsp mustard, ยฝ tsp cumin, 2 dried red chilli, pinch hing, and few curry leaves.
  • Add 1 onion and saute slightly till the onion softens.
  • Now addย 1 capsicum and saute till the capsicum turns crunchy.
  • Further, keeping the flame on low add ยฝ tsp turmeric, 1 tsp chilli powder, ยฝ tsp garam masala, and 1 tsp salt.
  • Saute on low flame till the spices turn aromatic.
  • Add inย 4 cup of cooked rice and prepare peanut masala.
  • Mix gently, making sure everything is well combined.
  • Cover and simmer for 5 minutes or until the spices are absorbed well.
  • Further addย 2 tbsp coriander,ย ยฝ lemon juice and mix well.
  • Finally, enjoy Capsicum Rice Recipe with raita.
