Flavored and spicy rice recipes are widespread across India and are made for various reasons and purposes. The main variations come from the hugely popular pulao recipe, which has spices and vegetables. the other variation is the stir-fried rice recipe and this recipe post is dedicated to the Chilli Garlic fried rice recipe.

Being a South Indian, rice is the staple food at our home. We make rice with rasam, sambar, and dal for our day-to-day lunch and dinner recipes. However, preparing the same rice and dal can be monotonous and we crave some flavored rice recipes. It includes Pulao and biriyani, and my personal favorite is the spicy fried rice. There are many different types of fried rice, but I like the homemade Chilli garlic sauce and its fried rice. But before using it, you may have to consider the spice level of the sauce. I have prepared a medium spice level and hence I have used 2 spoons of sauce for 4 cups of cooked rice. This would yield a medium spicy garlic fried rice and cater to almost everyone. But it could be a completely different scenario from other brands.

Anyway, before concluding some easy and important tips, suggestions, and variations for a perfect Chilli garlic fried rice recipe. Firstly, if you are running late and do not have much time to prepare the chutney. You may use store-bought for the same taste and quick turnaround. You may add rice and just toss it in soy sauce and vinegar to have real flavor. Secondly, I would heavily recommend using pre-cooked long-grained basmati rice for the recipe. You can use Sona Masuri rice but use it only if that is the option. Lastly, you can easily vary the spice level of the rice by increasing or decreasing the quantity of chili garlic sauce. I have used Kashmiri red chilies, but you may use any desired red chilies for a different taste and flavor.

Ingredients
  

For chilli paste:

  • 10 dried red chilli, soaked
  • 4 cloves garlic

For fried rice:

  • 2 tbsp oil
  • 5 cloves garlic, finely chopped
  • 2 dried red chilli, broken
  • 1 inch ginger, chopped
  • ยฝ onion, finely chopped
  • 10 beans, chopped
  • 2 tbsp sweet corn
  • ยฝ capsicum, chopped
  • 1 carrot, chopped
  • 2 tbsp spring onion, chopped
  • 4 cup cooked rice
  • ยฝ tsp pepper powder
  • 1 tsp salt
  • 2 tbsp vinegar
  • 2 tbsp soy sauce
  • 2 tbsp tomato sauce
  • 2 tbsp spring onion, chopped

Instructions
 

  • Firstly, in a mixer jar take 10 soaked dried red chilli, 4 cloves garlic and grind them to a smooth paste. Make sure to soak the dried red chilli till it softens. Keep aside.
  • In a wok heat, 2 tbsp oil. Add 5 cloves garlic, 2 dried red chilli and stir fry till the garlic turns golden brown.
  • Add 1 inch ginger and saute well.
  • Also, add ยฝ onion and saute until the onion softens.
  • Further, add prepared chilli garlic paste and cook till the oil separates.
  • Add 10 beans, 2 tbsp sweet corn, ยฝ capsicum, 1 carrot, 2 tbsp spring onion, and stir until the vegetables turn crunchy.
  • Add in 4 cup cooked rice, ยฝ tsp pepper powder, 1 tsp salt, 2 tbsp vinegar, 2 tbsp soy sauce, 2 tbsp tomato sauce and 2 tbsp spring onion.
  • Stir fry and mix until the rice is well combined with the sauce.
