Most of them are generally gravy or sauce-based snacks filled with veggies, spices, and chaat chutneys. But this recipe is the dry version known as the Bhel puri recipe or as Bhel recipe made with puffed rice.
I have shared quite a few Bhel recipes including the Jhalmuri or Churumuri recipe, but the Bhel puri recipe is known for its flavor and taste. The uniqueness of the Bhel puri chaat recipe lies in the chutney or sauce used in this recipe. Specifically, the green chutney and the imli chutney add a new flavor to this recipe. Adding these chutneys not only adds flavor but also adds a nice texture to the recipe. In other words, it makes the recipe semi-dry or semi-liquid as compared to other murmura recipes which are dry. However because it is semi-liquid, the recipe has to be served immediately once it is prepared. Hence the Bhel recipe is always prepared on demand by street vendors and is not prepared and stored in advance.
Furthermore, I would like to add some tips, suggestions, and variations for a perfect Bhel puri recipe. firstly, I would heavily recommend using crisp and fresh Murmura or any of the recipes. if you are using not fresh Bhel, you can dry roast in a low medium flame for about 5 mins to make a crisp Murmura. secondly, I have shared with you a medium spice Bhel puri recipe which I have controlled by green chutney and red chilli powder. you can lower or increase the spice level by increasing or decreasing either one of them. lastly, adding boiled aloo or potato is optional and you can skip it or replace it with other ingredients like boiled peas, chickpeas, and even a combination of these.

About Bhel Puri
It is a simple and popular chaat recipe that originates from the local streets of Mumbai but is widely accepted across India. Bhel Puri commonly known as the Bhel chaat recipe is typically prepared with a combination of many deep-fried condiments. Puffed rice is the main hero ingredient which is mixed or tossed with several other dry and wet condiments. It is a great evening snack with a cup of tea or coffee, but can also be a simple meal for dinner.
There are many different ways a simple Bhel Puri recipe is prepared. The most common way is to mix dry ingredients like Bhel, sev, peanuts, and puri with wet ingredients like green and Imli chutney. But the same can be made with just dry ingredients and hence can be served at any time without the ingredients turning soggy. In addition, the most common way is to prepare it as instant Bhel Puri Chaat. All the dry ingredients are deep-fried and mixed in advance. And whenever it is required, it needs to be mixed with wet ingredients and served.

Ingredients
for bhel puri mix:
- ½ cup peanut
- ½ cup roasted gram dal
- ¾ cup thick poha
- oil, for frying
- 2 tbsp oil
- ½ tsp turmeric
- ½ tsp chilli powder
- pinch hing
- few curry leaves
- 4 cup murmura
- ½ tsp cumin powder
- 1 tsp chaat masala
- ½ tsp kala namak
- ½ tsp salt
- 2 tbsp powdered sugar
- ½ tsp aamchur
- ½ cup spicy boondi
- ½ cup sev
- 10 papdi
for bhel puri chaat:
- 2 cup bhel mix
- ½ onion, finely chopped
- ½ tomato, finely chopped
- ½ boiled potato, cubed
- ½ tsp chaat masala
- 2 tbsp green chutney
- 2 tbsp tamarind chutney
- 2 chilli, finely chopped
- 2 tbsp coriander, chopped
- ½ lemon
Instructions
- Firstly, in a hot oil, place a sieve and fry ½ cup peanut on low flame.
- Once the peanut turns crunchy, drain off and keep aside.
- Now fry ½ cup roasted gram dal on low flame till it turns crunchy.
- Drain off and keep aside.
- Also, fry ¾ cup thick poha in hot oil till the poha turns crispy.
- Drain off and keep aside.
- In a large kadai, heat 2 tbsp oil. Add ½ tsp turmeric, ½ tsp chilli powder, pinch hing and few curry leaves.
- Saute on low flame until the spices turn aromatic.
- Add 4 cup murmura and fry til the murmura turns crispy and the spices are well combined.
- Turn off the flame and add ½ tsp cumin powder, 1 tsp chaat masala, ½ tsp kala namak, ½ tsp salt, 2 tbsp powdered sugar and ½ tsp aamchur.
- Add ½ cup spicy boondi, ½ cup sev, crush 10 papdi and mix well.
- Mix well making sure all are well combined.
- Finally, Behl Puri Mix is ready to make chaat.
How to make Bhel Puri Chaat Recipe:
- Firstly, in a bowl take 2 cup bhel mix.
- Add ½ onion, ½ tomato, ½ boiled potato,½ tsp chaat masala, 2 tbsp green chutney, 2 tbsp tamarind chutney.
- Mix well making sure all the chutney are well combined.
- Further add 2 chilli, 2 tbsp coriander, ½ lemon and mix well.
- Finally, enjoy Bhel Puri Recipe topped with more puri.
