well, i have posted the goli baje recipe several times by now on my blog, but i keep revisiting it again and again. even though the recipe is simple, i keep visiting it again and again as i always keep learning new techniques and tips for this recipe. also, my father is an expert in making goli baje recipe and he has come to my place to visit me. hence i thought to revisit to this recipe again, under his guidance. he gave me some simple and easy tips to make it more attractive and round in shape. in addition, i also learnt how to drop these balls into the hot oil so that it does not stick to each other yet shape like a ball. i have tried it to capture all those in my video so that it might be helpful to you all.
anyway, some more tips, suggestions and variations for a crisp and golden coloured goli baje recipe. firstly, i would like to emphasis on the use of maida or plain flour for this recipe. you may not get the same texture, shape and also that softness if you use atta or any other flour. secondly, while deep frying these, ensure to dip your finger in cold water before grabbing the dough. this would help the dough to release and slip through your fingers and form a round shape when dropped to oil. lastly, ensure to drop this in a good height and do not take the fingers too close to the oil. moreover always deep fry these in small batches and do not overcrowd them.

Ingredients
- 1½ cup maida / plain flour
- ¼ tsp baking soda
- pinch hing / asafoetida
- ¾ tsp salt
- 1 cup buttermilk
- 2 tbsp curry leaves, finely chopped
- 2 chilli, finely chopped
- 1 inch ginger, finely chopped
- 2 tbsp coconut, chopped
- oil, for frying
Instructions
- firstly, in a large bowl take 1½ cup maida, ¼ tsp baking soda, pinch hing and ¾ tsp salt.
- mix well making sure everything is well combined.
- now add 1 cup buttermilk. you can alternatively use curd.
- mix well with your hand in one direction.
- beat the batter making sure to incorporate air well.
- now add 2 tbsp curry leaves, 2 chilli, 1 inch ginger and 2 tbsp coconut.
- mix well making sure everything is well combined.
- cover and rest for 3 hours for best results.
- after 3 hours, mix the batter again.
- now dip your hand in cold water and pinch a small ball sized batter.
- drop it in hot oil keeping the flame on medium.
- stir and fry uniformly on medium flame.
- drain off the goli baje once it turns golden brown and crisp.
- finally, goli baje is ready to enjoy with coconut chutney.
