However, it can be even more complicated and overwhelming for kids. There are so many variables, factors and consideration that goes into a simple kid’s tiffin box preparation. To solve this problem, I have come up with some simple and easy ideas which would not only be appreciated but also makes it a complete meal.

I have posted quite a few thali or rice-based lunch box recipes, but I always get a lot of requests for kid’s recipes. Well, personally I was not spending much time as my daughter was still young. However, I have started now to invest more time in it as she needs tiffin box meals. Moreover, being vegetarian, we do not have many options from outside food joints. Therefore, it becomes a mandatory option for us. In this post, I have shown a basic and creamy sandwich and noodles options, but the sky is the limit. Moreover, I am planning to continue this tradition and post more and more such meal combo ideas. In addition, would try to make it more balanced with some additional sides like vegetables, nuts and fruits with one main dish. Firstly, as you have noticed, I have tried to make a combo with nuts, vegetables, and fruits in addition to the main dish. However, if your kids do not prefer this way, you may skip it and focus just on the main dish. Secondly, with the main dish, I have reduced the spice level of the main dish considering these are made for kids. However, if you are comfortable serving more spicy food, you may spice it up. Ingredients
  

for curd sandwich:

  • 1 cup curd
  • ½ cup mayonnaise, eggless
  • ½ tsp mixed herbs
  • ¼ tsp pepper powder
  • ¼ tsp salt
  • ½ onion, finely chopped
  • 3 tbsp sweet corn
  • ½ capsicum, finely chopped
  • ½ carrot, grated
  • bread
  • butter

for veg noodles:

  • 2 tsp oil
  • 2 clove garlic, chopped
  • ½ onion, sliced
  • 2 tbsp capsicum, chopped
  • 5 beans, chopped
  • ½ carrot, chopped
  • 3 tbsp tomato sauce
  • 1 tsp chilli sauce
  • 2 tsp vinegar
  • 2 tsp soy sauce
  • ½ tsp salt
  • 1 pack noodles, boiled
  • 2 tbsp spring onion, chopped

Instructions
 

how to make curd sandwich:

  • firstly, in a bowl take 1 cup curd, ½ cup mayonnaise, ½ tsp mixed herbs, ¼ tsp pepper powder, and ¼ tsp salt.
  • mix well making sure everything is well combined.
  • also add ½ onion, 3 tbsp sweet corn, ½ capsicum, ½ carrot and mix well.
  • now spread butter on 2 slices of bread.
  • spread a generous amount of prepared curd stuffing.
  • cover with another slice of bread and trim the sides.
  • finally, to pack the kids lunch box, pack curd sandwich, oranges, and nuts in the box.

how to make veg noodles:

  • firstly, in a pan heat 2 tsp oil, add 2 clove garlic and saute well.
  • add ½ onion, 2 tbsp capsicum, 5 beans, and ½ carrot.
  • stir fry until the vegetables turn crunchy.
  • also add 3 tbsp tomato sauce, 1 tsp chilli sauce, 2 tsp vinegar, 2 tsp soy sauce and ½ tsp salt.
  • stir fry until everything is well combined.
  • now add boiled 1 pack noodles and mix well.
  • finally, to pack the kids lunch box, pack veg noodles, carrots, and biscuits in the box.
