kharvas recipe | junnu recipe | how to make instant kharvas with step by step photo and video recipe. indian sweets are world famous and have many variants and flavours of sweets prepared with just full cream milk. particularly the bengali cuisine is full of chenna based sweets dipped in sugar syrup or sweetened milk. kharvas recipe or junnu is one such sweet recipe made from cow’s colostrum, but in this, i have used milk & milk powder.

as i previously mentioned, kharvas is a taditional sweet recipe and is generally prepared with cow colostrum (cheek). but we all know, getting the first form of milk produced by the cow is almost impractical. hence this recipe which uses the combination of full cream cows milk with milk powder, curd and condensed milk. moreover, i even call this recipe as an instant version of junnu recipe. because of the usage of condensed milk as compared to traditional one where the milk is evaporated in constant low medium heat. further, it then steamed in a hot water which gives it a smooth and soft texture. as a matter of fact, this step of steaming makes it unique and distinctive from the paneer or chenna based sweets.

furthermore, i would like to pinpoint some tips and suggestions while preparing the kharvas recipe / ginnu recipe. firstly, as i mentioned previously, this is an instant version and i have not used the cow’s colostrum milk. but if you do have an access to it, ignore my alternatives and use it directly for the best results. secondly, the traditional version uses jaggery or ghud mixed with colostrum milk. however, i have used the condensed milk which already contains the required sweetness in it. lastly, i have added cardamom powder with a basic garnishing. but this can be easily extended with choice of dry fruits like powdered cashews, almonds and walnuts.

Ingredients
  

  • 1 cup milk, full cream
  • ½ cup milk powder, full cream
  • 1 cup curd / yogurt, thick
  • 1 cup condensed milk / milkmaid
  • ¼ tsp cardamom powder / elachi powder

Instructions
 

  • firstly, in a large bowl take 1 cup milk and ½ cup milk powder. if you have first-day colostrum milk then just add 1 cup sugar for 4 cup colostrum milk and steam.
  • whisk well till the milk powder combines well without any lumps.
  • now add 1 cup curd and 1 cup condensed milk.
  • whisk smooth making sure everything is combined well.
  • transfer the milk mixture to a round pan.
  • sprinkle ¼ tsp cardamom powder over the mixture.
  • cover with aluminium foil or place a pate to prevent water from entering while steaming kharvas.
  • place the pan into a steamer with enough water. alternatively, place in the cooker without keeping the whistle.
  • steam for 35 minutes. make sure to add water to the steamer if water finishes off in between.
  • remove the aluminium foil and check if the toothpick inserted comes out clean.
  • refrigerate the kharvas for an hour or till it sets completely.
  • unmould the kharvas carefully, you can see excess water separating.
  • finally, cut to desired pieces and serve instant kharvas / junnu.

notes:

  • firstly, traditional kharvas is prepared with colostrum milk (cheek) and no curd / condensed milk is added.
  • also, steam the junnu on medium flame, else they turn rubbery.
  • additionally, garnish with chopped dry fruits / saffron for more flavours.
  • furthermore, to make junnu without condensed milk and curd; use corn flour along with milk and sugar.
  • finally, use good quality milk and milk powder to make instant kharvas / junnu recipe.
