balushahi recipe | badusha recipe | badusha sweet or badhusha sweet with detailed photo and video recipe. a traditional indian sweet dessert recipe prepared mainly with maida or all purpose flour, deep fried in ghee / oil and soaked in sugar syrup. it has a strong resemblance to glazed donut but varies with its layered texture and crunchy taste. in north india it is known as balushahi and badusha or badshah in south indian cuisine.
there are several variation to the traditional balushahi recipe or badusha recipe, but in this i have shared the most common version. in my native it is commonly known as badushah or saatu, has a thick sugar coating on bottom side. the top layer has a thin layer of sugar coating with a smooth surface. in the inside it has rough flaky texture with some random sweet contents. however in this recipe of badhusha sweet, i have made a dent at the center with evenly coated sugar syrup. also the dent is either filled with dry fruits or can also be filled with rabdi or rabri. further the latter variation is best served when it is warm.
some important tips and suggestions for a perfect flaky balushahi recipe or badusha recipe. firstly, kneading the dough light is very critical for this recipe. make sure to not knead the dough and just combine like preparing for nankhatai. secondly, while frying the badhusha sweet, make sure the flame is in low heat. also i would recommend to use ghee or clarified butter in the place of oil for deep frying. lastly, the consistency of sugar syrup defines the texture of badusha sweet. it can be either thin like gulab jamun‘s sugar syrup or hard crystallised one forming a thick layer on top badusha.

Ingredients
for dough:
- 1½ cup 250 gm maida / plain flour / refined flour / all purpose flour
- ½ tsp sugar
- ½ tsp baking powder
- water as required (¼ cup approx)
- ¼ cup 50 gm ghee / clarified butter
- ¼ cup 65 gm curd / yogurt
- oil for deep frying
for sugar syrup:
- 1 cup 250 gm sugar
- ½ cup water
- few thread saffron / kesar
- ¼ tsp cardamom powder / elachi powder
Instructions
- firstly, in a large mixing bowl take 1½ cup maida.
- also add ½ tsp sugar, ½ tsp baking powder. combine well.
- now add ¼ cup ghee and crumble the mixture.
- further add ¼ cup curd and combine well.
- additionally add ¼ cup water and start to make dough without kneading.
- cover with moist cloth and rest for 15 minutes.
- after the dough has rested for 15 minutes, slightly knead the dough.
- pinch a small ball sized dough and make ball.
- make a dent at the centre with the help of thumb.
- deep fry in medium hot oil on low flam till the balls turn golden brown and crisp.
- drop them into warm sugar syrup immediately.
- coat the badhusha with sugar syrup both the sides and soak for 5 minutes.
- finally, serve balushahi recipe or badusha recipe garnished with few chopped cashews.
how to prepared balushahi recipe with step by step photo:
balushahi dough prepartion:
- firstly, in a large mixing bowl take 1½ cup maida.
- also add ½ tsp sugar, ½ tsp baking powder. combine well.
- now add ¼ cup ghee and crumble the mixture.
- further add ¼ cup curd and combine well. do not knead the dough.
- additionally add ¼ cup water and start to make dough without kneading. adjust the water accordingly.
- make a soft dough, but do not knead as the dough as we are preparing flaky badushahi.
- cover with moist cloth and rest for 15 minutes.
sugar syrup preparation:
- firstly, in a large vessel prepare sugar syrup by dissolving 1 cup sugar in ½ cup water.
- also add few thread saffron and mix well.
- further boil for 5 minutes or till sugar syrup turns slightly sticky. if you are looking for more sweet badushahi then get to 1 string consistency sugar syrup.
- add in ¼ tsp cardamom powder and mix well.
- sugar syrup is ready, cover and keep aside.
badushah frying recipe:
- after the dough has rested for 15 minutes, slightly knead the dough.
- pinch a small ball sized dough and make ball. do not knead the ball and its completely fine if there are cracks. as they help sugar syrup to seep inside badushah.
- make a dent at the centre with the help of thumb.
- deep fry in medium hot oil on low flame. also do not crowd the oil as badushahi will puff up slightly while frying.
- after a minute or two, the badushah will start to float.
- stir occasionally and fry both the sides keeping flame on low.
- fry till the balls turn golden brown and crisp. this takes approximately 15 minutes.
- drain off the badhusha over kitchen towel to remove excess oil.
- drop them into warm sugar syrup immediately. coat the badhusha with sugar syrup both the sides and soak for 5 minutes.
- finally, serve balushahi recipe or badusha recipe garnished with few chopped cashews.
notes:
- firstly, do not knead the dough as the flakiness of balushahi will be lost.
- also, adding ½ tsp sugar of sugar in dough helps to get rich golden badusha.
- additionally, fry on very low flame, else badhusha sweet will remain uncooked from inside.
- finally, increase the sweetness of balushahi recipe or badusha recipe by preparing a string consistency sugar syrup.

I tried this recipe yesterday. The badusha was soft inside, and not flaky like how I have eaten it as made by the traditional sweet meat guys. Did I do something wrong? Or is that the way it is meant to be?
nope… badushahi turns to be flaky inside…make sure to fry on low flame, else it doesnt turn to be flaky

Hi Archana, I follow your recipes in youtube regularly. I made a lot of recipes of yours especially tge instant zalebi turned out very well. Today I tried badusha… but while frying they puffed a lot and they almost turned out like laddus. Taste is not ok.
