South Indian cuisine is hugely popular for its myriad range of healthy and steamed breakfast recipes. It can be either dosa recipes or idli recipes which are prepared with various natively available ingredients. But the other popular steam cake recipe from God’s own country is the Puttu recipe from rice and grated coconut.
There are several ways the Puttu is served and consumed and it totally depends upon when it is served. The most common and popular way of consuming Puttu recipes is serving it with kadala curry or black chickpeas curry. The combination of spicy curry with a coconut flavor Puttu makes it an ideal combo for morning breakfast. But my favorite combination is spicy tomato chutney or onion chutney with Puttu. But I even experiment with other coconut-based chutneys like mint chutney and peanut chutney too. Further, the Puttu is also served as a dessert with a combination of ripe bananas. It is a very popular combo and many prefer to eat Puttu this way. I personally do not like it this way and prefer the spicy combo but it is completely up to individual preference.
Furthermore, some easy tips and suggestions while preparing the Kerala Puttu recipe. firstly, the recipe is specifically prepared with a device known as a Puttu maker which is a cylindrical tube attached to the steamer. while I do not have an alternative for the tube, you can replace the steamer with a pressure cooker and fix the tube to the whistle area. secondly, stuff the coconut powder tightly and firmly in the Puttu tube so that it holds the shape while removing it. also, make sure to begin the stuffing with coconut and end with coconut. lastly, the same recipe can also be prepared with ragi powder too which is basically a healthy version of this recipe. It is a popular and traditional South Indian Breakfast recipe made with rice flour and coconut grate. The traditional Puttu is typically served with a spicy gravy curry like kadala curry but any spicy gravy is an option. It can also be served with other accompaniments like a ripe banana, sweetened coconut grate, or just sugar. The texture and shape are often confused with the other South Indian Breakfast Idli but it has its own taste and texture.
There are many different variations to the traditional Kerala Puttu recipe. The variations are mainly with the type of flour used to make this recipe. The authentic recipe is to use rice flour and coconut grate. However, there are other subtle variations like Ragi Puttu, Nool Puttu, Aval Puttu, and even wheat Puttu. In addition, the variations are mainly due to the region where this dish is prepared in South India.

Ingredients
- 2 cup puttu flour
- ¼ tsp salt
- ¾-1 cup water, as required
- 1 cup coconut, grated
Instructions
- firstly in a large bowl take 2 cup puttu flour and ¼ tsp salt. mix well.
- now add ¼ cup water and crumble the flour.
- add water in batches and mix well with your fingertips.
- the flour need to hold shape when pressed between the fist, and need to break on further pressing.
- make a moist flour with crumbly texture.
- break all the lumps with your finger. alternatively, blend it in a mixer for 2 pulses.
- now take a puttu steamer and layer with 2 tbsp of fresh grated coconut.
- followed by 3 tbsp of puttu flour. again layer with 2 tbsp of coconut, 3 tbsp of 3 tbsp of puttu flour.
- lastly add 2 tbsp coconut and level it up.
- close the puttu kutty (cylindrical tube) and steam for 5 minutes or till the steam escapes from top holes of puttu kutty (cylindrical tube).
- carefully open it and push the puttu using a wooden ladle from the back.
- finally, serve kerala puttu hot along with kadala curry.
How to make Puttu Recipe with step-by-step photos:
- firstly in a large bowl take 2 cup puttu flour. i have used store brought puttu flour. to make homemade puttu flour, wash and soak raw rice (puttu arisi) for 5 hours. drain off the water and spread the rice over cloth and allow it to dry for 30 minutes. grind to slightly coarse powder when the rice is slightly wet. dry roast till the moisture content is completely dried and flour turns sandy texture. cool down completely and homemade puttu flour is ready.
- add ¼ tsp salt and mix well.
- now add ¼ cup water and crumble the flour.
- add water in batches and mix well with your fingertips.
- the flour need to hold shape when pressed between the fist, and need to break on further pressing.

- now prepare the steamer pot ready by boiling 3 cup water in it.
- once the water comes to a boil, place puttu kutty (cylindrical tube).
- allow to steam for 5 minutes or till the steam escapes from top holes of puttu kutty (cylindrical tube).
- remove the puttu kutty from the pot and rest for 2 minutes.
- carefully open it and push the puttu using a wooden ladle from the back.
- finally, serve kerala puttu hot along with kadala curry.
Notes:
- firstly, add water in batches to prevent the rice flour turning too watery.
- also, using fresh coconut will enhance the flavour of puttu.
- furthermore, if you do not have puttu steamer, you can steam in steel glass or using idli plate.
- finally, kerala puttu recipe tastes great even with banana and papad.
