kachori chaat recipe | khasta kachori chaat | moong dal kachori chaat with detailed photo and video recipe. moong dal kachori or khasta kachori chat recipe is a popular street food of rajasthan and north india. the chaat can also be prepared with leftover moong dal kachori or matar kachori. kachori chaat recipe | khasta kachori chaat recipe with step by step photo and video recipe. traditionally, kachori or khasta kachori’s are served for breakfast and snacks. however, the leftover kachori’s are transformed to kachori chat recipe. while, the recipe is very similar to samosa chaat recipe, yet both offer different and unique taste. almost, all chaat recipes does contain curd, but kachori chat recipe requires significantly more yogurt. adding curd gives sourness taste to chaat recipes and enhances the taste.
first of all, i have to admit, my initial experience with kachori chat wasn’t that great. basically, i was on my annual trip to rajasthan and it was here i first encountered kachori. while, kachori for breakfast was not an issue. however, it was during in the evening when i had the kachori chat for snacks and i had bad stomach upset. perhaps it could be due to my over eating. yet, the taste and spice level was amazing and i still cannot forget the taste. keeping aside the bad experience, i would always recommend kachori chat anytime.
furthermore, i would take this opportunity to discuss about the street food of rajasthan cuisine. rajasthan is primarily, occupied by vegetarian marawaris community. however, it is also under the influence of rajput communities delicacy as well. rajput cuisines mainly offers red hot meat delicacies to rajasthani cuisine. so basically, you can see the mixture of vegetarianism and non-vegetarianism in the street food as well. however, pyaz kachori and pyaaz kachori chat binds both these communities. moreover, it has emerged as the staple food of rajasthan.

Ingredients
- 2 moong dal kachori or matar kachori
- ¼ cup thick curd, fresh
- 2 tbsp tamarind chutney / emli chutney
- 2 tbsp green chutney
- pinch of cumin powder
- ¼ tsp kashmiri red chilli powder, optional
- ¼ tsp chaat masala
- salt to taste
- ¼ onion, finely chopped
- ¼ to mato, finely chopped
- handful of sev
- few coriander leaves, finely chopped
Instructions
- firstly, place 2 large kachories. use either moong dal kachori or matar kachori.
- further, gently make a hole in the centre without breaking entire kachori.
- pour curd in centre of kachori.
- also add in tamarind chutney, green chutney, cumin powder, chilli powder, chaat masala and salt.
- further top with finely chopped onions and tomato.
- also sprinkle generous amount of sev over it.
- finally, garnish with corinader leaves and serve kachori chaat along with hot masala tea.
how to make khasta kachori chaat step by step photo recipe:
- firstly, place 2 large kachories. use either moong dal kachori or matar kachori.
- further, gently make a hole in the centre without breaking entire kachori.
- pour curd in centre of kachori.
- also add in tamarind chutney, green chutney, cumin powder, chilli powder, chaat masala and salt.
- further top with finely chopped onions and tomato.
- also sprinkle generous amount of sev over it.
- finally, garnish with corinader leaves and serve kachori chaat along with hot masala tea.
notes:
- firstly, use leftover kachories by just warming up in oven.
- also, adjust the amount of spiciness depending on the stuffing.
- additionally, prepare dahi kachori chaat by pouring more curd.
- finally, serve kachori chaat immediately, else they will turn soggy.
