masala papad recipe | homemade masala papadums – 4 ways | papad masala varieties with step by step photo and video recipe. papad is one such condiment that is a must for most of the meal, yet it does not get the importance it deserves. even though it is a must for many to complete a meal, but it is served at a corner of a thali plate without much importance to it. perhaps, it is assumed it is not an interesting dish by itself. hence i am planning to make it more interesting with the masala papad recipe in 4 different ways.

initially, i wanted to post just a basic or classical masala papad recipe with a video. but then later decided to have a variety of it as there isn’t any rocket science with the basic one. moreover, you may have already relished the basic one like a million times by now and maybe craving something different. hence i have come up with 3 more additional variants. the first one is the chaat variant with chaat chatni and condiments loaded on top of masala papad. the second variant is the chips flavoured papad with a topping of tomato sauce. this is very similar to the nachos variant with potato chips. the last variant is the pizza variant where papad is topped with cheese and pizza toppings. this is my personal favourite as it ticks my street food and also pizza cravings. do let me know your favourite by sending an email or via facebook message.

furthermore, i would also like to add some additional tips, suggestions and variants to homemade masala papadums. firstly, try to use large-sized papad for this recipe. avoid using small sized ones as it may not carry all the toppings in them. moreover, i would heavily recommend using urad dal papad for this recipe. generally, urad dal based papad does not carry a strong lentil flavour and it makes it ideal for different types of papad masala. lastly, if you are planning it for a party or for any occasion, do not prepare this in advance as it may turn soggy. you may prepare with all the toppings and start assembling it whenever you require it.

  • 4 papad
  • oil, for frying

for classic masala papad:

  • 2 tbsp onion, finely chopped
  • 2 tbsp tomato, finely chopped
  • 1 chilli, finely chopped
  • 2 tbsp sev
  • pinch chilli powder
  • pinch chaat masala
  • 1 tbsp coriander, finely chopped

for masala papad chaat:

  • 2 tbsp onion, finely chopped
  • 2 tbsp tomato, finely chopped
  • 1 tsp green chutney
  • 1 tsp tamarind chutney
  • 2 tbsp sev
  • 1 tbsp curd
  • pinch chaat masala
  • pinch chilli powder
  • 1 tbsp coriander, finely chopped

for chips masala papad:

  • 2 tbsp onion, finely chopped
  • 2 tbsp tomato, finely chopped
  • 2 tbsp sweet corn
  • 2 tbsp tomato sauce
  • handful chips

for pizza masala papad:

  • 2 tbsp onion, finely chopped
  • 2 tbsp tomato, finely chopped
  • 2 tbsp capsicum, finely chopped
  • few olives, chopped
  • few jalapeno, chopped
  • 2 tbsp tomato sauce
  • 3 tbsp cheese, grated
  • pinch chilli flakes
  • pinch mixed herbs

Instructions
 

  • firstly, deep fry the papad in hot oil. i have used lijjat papad, you can use papad of your choice.
  • deep fry on both sides to make it crunchy. if you are diet conscious, then you can directly fry on flame or in the microwave.
  • drain off over kitchen paper to get rid of excess oil.

how to make classic masala papad:

  • firstly, take fried papad on a plate.
  • garnish with 2 tbsp onion, 2 tbsp tomato, 1 chilli and 2 tbsp sev.
  • also sprinkle chilli powder, chaat masala and 1 tbsp coriander.
  • finally, enjoy crispy classic masala papad with evening tea.

how to make masala papad chaat:

  • firstly, take fried papad on a plate.
  • garnish with 2 tbsp onion, 2 tbsp tomato, 1 tsp green chutney and 1 tsp tamarind chutney.
