masala papad is good to eat only within few minutes it is served otherwise it tends to absorb moisture from topping and quickly become soggy. also in restaurant they deep fry the papadum to make masala papad. even i have tried the deep fried masala papad recipe today.

to make masala papad we generally use urad dal papads or lijjat papad. you can either fry or roast the papads in oil. i sometimes brush the papad with oil and microwve for 2 minutes checking in between. we prefer the fried ones over the roasted ones. the roasting can be done on a grill or microwave or on open fire.

Ingredients (1 cup = 255 ML)
  • 2 large urad dal papads
  • 1 medium onion finely chopped or ½ cup finely chopped onion
  • 1 medium tomato finely chopped or ½ cup finely chopped tomatoes
  • 2 tbsp chopped coriander/dhania
  • 1 tsp lime or lemon juice or add as requried
  • 1 cup fine sev
  • 1 tsp chilli powder
  • salt as required
  • enough oil for shallow frying papads
Instructions
  1. take the papad. optionally if you do not have large one, use smaller one.
  2. heat oil for deep frying in a pan and slid the papad into the hot oil.
  3. fry for some seconds till the papad is crisp.
  4. with a tong remove the papad from the oil.
  5. place the fried papad on a paper mapkin towel so that excess oil is absorbed.
  6. place the papad in a plate and add finely chopped onion and tomato on top of the papad
  7. sprinkle chilli powder and salt on top of the papad
  8. squeeze the lemon on top of papad
  9. sprinkle chopped coriander leaves.
  10. and finally, add nylon or fine sev on top of the papad
  11. serve masala papad immediately or else they turn soggy.

  3. flip the papad to other side. fry for some seconds till the papad is crisp. with a tong remove the papad from the oil.
  4. place the fried papad on a paper napkin towel so that excess oil is absorbed.
  5. place the papad in a plate and add finely chopped onion and tomato on top of the papad

notes:

  • you can skip adding sev, if you do not have it or you do not like it.
  • de-seed the tomatoes and then chop.
  • you can prepare the masala papad in advance. and add the toppings just before serving.
  • optionally, you can dry roast the papad directly on flame using tongs
