I am not a massive fan of the moong dal idli recipe, and I would always fall back to the traditional rice-based idli. But still, I make it occasionally as it is elementary to make. In particular, the recipe does not have a combination of rice and urad dal and is made with just moong dal batter. In other words, the recipe is very similar to rava idli, which is made with just one ingredient. Moreover, it has all the required spices, which makes it a one-pot meal. You do not need any other side dish with it, but I like it with green chutney or Schezwan chutney. You can have it with any choice of coconut-based chutney, as it should taste equally good.
Furthermore, I would like to highlight some tips, suggestions and variations for the moong dal idli recipe. Firstly, I have used split green gram, and I would heavily recommend using the same for this recipe. Please do not go for the whole green gram, which may spoil the taste and flavour. Secondly, I have added curd or yoghurt to add a sour taste to the batter. As an alternative, you can add lemon juice to have the effect. Lastly, I have added eno salt as the fermenting agent. You can add baking soda to the process. In addition, if you want the natural fermentation, use urad dal in a 1:1 ratio and ferment it overnight.

There are many ways to make a simple and soft Moong Dal idli recipe. Typically, it is made with just one lentil, i.e. moong dal or mung beans. However, it can be extended by adding different types of lentils to make it even more filling and protein-rich. Add lentils like toor dal, channa dal, or masoor dal. However, toor and channa dal may need more time to soak and grind. In addition, the idli can be made with rice rava too. Adding rice rava helps to get the coarse or grainy texture to the idli. Moong Dal Idli Recipe | High Protein Green Gram Idli
Ingredients
- 1 cup moong dal
- 2 tbsp oil
- 1 tsp mustard
- ยฝ tsp chana dal
- ยฝ tsp urad dal
- 1 tsp cumin
- pinch hing
- few curry leaves
- 1 inch ginger, finely chopped
- 3 chilli, finely chopped
- 2 tbsp carrot, grated
- ยผ tsp turmeric
- 1 cup rava, coarse
- 1 cup curd
- 1 tsp salt
- 2 tbsp coriander, finely chopped
- 1 tsp eno fruit salt
- cashew, for garnishing
Instructions
- Firstly, rinse and soak 1 cup moong dal for 2 hours.
- Drain off the water and transfer to the mixer jar.
- Add 1 cup curd and grind to a smooth batter.
- Transfer the batter to the large bowl. Keep aside.
- In a pan, heat 2 tbsp oil. Add 1 tsp mustard, ยฝ tsp chana dal, ยฝ tsp urad dal, 1 tsp cumin, a pinch of salt, and aย few curry leaves. Splutter the tempering.
- Addย 1 inch ginger, 3 chilli, and saute slightly.
- Further addย 2 tbsp carrot, ยผ tsp turmeric and saute until it turns aromatic.
- Add 1 cup of rava and roast till the rava turns aromatic.
- Cool completely and transfer into the moong dal batter bowl.
- Add 1 tsp salt and mix well adjusting the consistency.
- Rest the batter for 20 minutes for rava to soak well.
- Addย 2 tbsp coriander and mix well.
- After the rava has soaked well, add 1 tsp eno fruit salt and mix gently.
- Mix the batter until the batter turns frothy.
- Place the roasted cashew in a greased idli plate and pour the batter into the mould.
- Place the idli plate in a steamer and steam for 10 minutes.
