moong sprouts curry recipe | sprouted moong curry | molake kaalu or hesaru kaalu palya with detailed photo and video recipe. a healthy and a tasty dry curry or sabzi recipe prepared from sprouted moong beans. it is a popular north karnataka or south maharashtra recipe and is mainly served with jowar roti or chapati. it is generally prepared as a dry variant, but also prepared with gravy version too.
sprouts curry is a very generic recipe as it can be prepared with myriad sprouts with the various pulses and cereals. as matter of fact, i have shared a couple of them already like mixed sprouts masala and misal pav recipe. but i was getting several requests for north karnataka style moong sprouts curry or also known as kalu palya. it is famously served with jowar roti or jolada rotti or even with bhakri. the combination of kalu palya, jowar roti, baby or pink radish and shallots is lip-smacking. having said that, i personally like this variant of dry sprouted moong curry because of its health aspect. moreover, it is not necessarily limited to jowar roti and can also be served with rice, chapati and puri too.
furthermore, some important tips and suggestions while preparing the moong sprouts curry recipe. firstly, soak moong gram well to get good quality sprouts. also, do not overcook sprouts as the nutrition will be lost. additionally, add a variety of sprouts to make mixed sprouts curry. furthermore to prepare no onion – no garlic sprouts curry, temper with jeera and add pressure cooked sprouts along with spices and lemon juice. lastly, add methi leaves / dil leaves to sprouts curry to prepare north karnataka kaal palya recipe.

moong sprouts curry recipe | sprouted moong curry | hesaru kaalu palya
Ingredients
- 4 tsp oil
- 1 tsp mustard
- 1 tsp jeera / cumin
- pinch hing / asafoetida
- few curry leaves
- 2 clove garlic, finely chopped
- ½ tsp ginger paste
- 1 chilli, slit
- 1 onion, finely chopped
- 1½ tomato, finely chopped
- ¼ tsp turmeric
- ½ tsp kashmiri red chilli powder
- ½ tsp jaggery
- 1 tsp salt
- 2 cup moong sprouts / hesaru kaalu molake
- 1½ cup water
- 2 tbsp coriander, finely chopped
Instructions
- firstly, heat 4 tsp oil and splutter 1 tsp mustard, 1 tsp jeera, pinch hing and few curry leaves.
- also saute 2 clove garlic, ½ tsp ginger paste and 1 chilli.
- additionally, add 1 onion and saute well.
- further, add 1½ tomato and saute until it turns soft and mushy.
- now add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp jaggery and 1 tsp salt.
- saute on low flame till the spices turn aromatic.
- furthermore, add 2 cup moong sprouts. to prepare moong sprouts soak 1 cup of moong overnight, later tie in cloth and rest for 24 hours. refer to how to prepare moong sprouts.
- also, add 1½ cup water and mix well. add more water if you are looking for gravy consistency.
- cover and simmer for 15 minutes or till sprouts are cooked completely.
- finally, add 2 tbsp coriander leaves and serve hesaru kaalu palya / moong sprouts curry with jolada rotti / chapati.

notes:
- firstly, making sprouts is optional, you can also prepare with soaked moong.
- also, add dil leaves / sabbasige soppu at last and cook for 5 minutes.
- additionally, pressure cook for 1 whistle if you are looking to prepare in cooker.
- finally, hesaru kaalu palya / moong sprouts curry tastes great when prepared dry.
