mushroom ki sabji recipe | masrum ki sabji | dry mushroom sabzi recipe with a detailed photo and video recipe. a simple, easy and quick dry sabzi recipe prepared with sliced mushrooms and other spices. it is easy and quick to prepare with fewer ingredients and tastes amazing when served with roti or chapati for lunch and dinner. the recipe is prepared with sliced button white mushrooms which are best suited for this sabji.
i have posted several other mushroom curries or sabzi recipe but was mostly gravy based recipes. i was getting several requests for a simple dry sabji recipes, particularly with mushroom and other easily available vegetables. hence i decided to post this simple and easy to cook mushroom ki sabji recipe. basically, it is prepared with a base of finely chopped onion and tomatoes which give a sharp and sour taste to it. later it is mixed with spices like chilli powder, turmeric, garam masala and coriander leaves which makes it flavorful. in addition, you can also add some soaked or frozen green peas which makes it an easy variation to this recipe.
furthermore, i would like to add some variations and suggestions for mushroom ki sabji recipe. firstly, the recipe is ideally prepared with sliced mushrooms, preferably vertical sliced. but you can also prepare it by cutting the mushroom to equal half and then followed by this recipe. secondly, do not add any extra water while preparing this curry or sabzi. mushrooms generally contain a lot of moisture and it oozes out while frying in the pan and it should be more than sufficient for this recipe. lastly, the recipe can be easily extended by adding other veggies to it, to make a mixed veg mushroom sabji. you can add vegetables like green peas, carrot, potatoes, sweet corn, baby corn and broccoli.

Ingredients
- 4 tsp oil
- ½ tsp mustard
- ½ tsp cumin / jeera
- few curry leaves
- 3 clove garlic, sliced
- 1 green chilli, slit
- 1 onion, finely chopped
- 1 tsp ginger paste
- 1 tomato, chopped
- 500 grams mushroom, slice
- ½ tsp salt
- ½ tsp turmeric
- ¼ tsp kashmiri chilli powder
- ¼ tsp garam masala
- ½ tsp pepper, crushed
- 2 tbsp coriander leaves, chopped
- 1 tbsp lemon juice
Instructions
- firstly, in a large kadai heat 4 tsp oil and add ½ tsp mustard, ½ tsp cumin, few curry leaves.
- also, add 3 clove garlic and 1 green chilli. saute and splutter.
- further add 1 onion, 1 tsp ginger paste and saute well.
- additionally, add 1 tomato and saute till tomatoes turn soft and mushy.
- furthermore, add 500 grams of sliced mushroom and ½ tsp salt.
- saute for 2 minutes and cover and simmer for 10 minutes.
- now add ½ tsp turmeric, ¼ tsp chilli powder, ¼ tsp garam masala and ½ tsp pepper.
- saute for a minute till masala gets cooked well.
- now add 2 tbsp coriander leaves and 1 tbsp lemon juice. mix well.
- finally, serve mushroom ki sabji recipe with roti / chapati.
how to make masrum ki sabji with step by step photo:

- cover and simmer for 10 minutes or till mushroom shrink completely.
- now add ½ tsp turmeric, ¼ tsp chilli powder, ¼ tsp garam masala and ½ tsp pepper.
- saute for a minute till masala gets cooked well.
- simmer for 3 minutes or till mushrooms absorbs masala.
- now add 2 tbsp coriander leaves and 1 tbsp lemon juice. mix well.
- finally, serve mushroom ki sabji recipe with roti / chapati.
notes:
- firstly, do not add any extra water as mushroom releases water while cooking.
- also, do not overcook mushrooms, it loses its flavour.
- additionally, add peas to prepare mushroom matar dry sabji.
