phirni recipe | firni recipe | phirni sweet recipe | rice phirni recipe with detailed photo and video recipe. basically a rice pudding dessert recipe which is very similar to rice kheer yet has a subtle difference to it. it is typically prepared during festival seasons especially during the holy month of eid / ramazan as iftar recipes.
i was getting several request for a dessert recipe on this holy month of ramadan for the iftar recipes. i thought of sharing another variation of sheer khurma which i have already shared previously. however later i got this request from one the readers to prepare firni recipe and i was delighted to share this recipe. moreover competitively, phirni recipe is easier recipe compared to sheer kurma and can be prepared in jiffy. typically whenever i prepare phirni sweet recipe, i refrigerate it and serve it in small quantity after our dinner.
furthermore some important tips and recommendations for perfect rice phirni recipe. i have used basmati rice for this rice pudding recipe. while basmati rice is the recommended one, you can use sona masuri rice too as an alternative. secondly, soaking of rice is important in this recipe. however if you are running short of time, then soak it with hot water to reduce the time to half. lastly, you can top the firni with choice of dry fruits to make it flavourful of your choice.

Ingredients
- 2 tbsp basmati rice
- water for soaking
- 1 litre milk, full cream
- ¼ cup sugar
- ¼ tsp cardamom powder / elachi powder
- 2 tbsp saffron milk
- few dry fruits, chopped
Instructions
- firstly, soak 2 tbsp of basmati rice for 30 minutes.
- discard the water and blend rice to coarse paste. keep aside.
- now in a large kadai boil 1 litre milk.
- stir occasionally, and simmer for 10 minutes.
- keep the flame on low or till milk thickens.
- now add in prepared coarse rice paste.
- stir continuously for 5 minutes. else, lumps might form.
- simmer for another 5 minutes stirring in between.
- boil the milk till the rice gets cooked completely.
- further add ¼ cup of sugar and 2 tbsp saffron milk.
- mix well till the milk thickens and turn creamy.
- add in cardamom powder and mix well.
- finally, serve chilled phirni garnished with few chopped nuts.
how to make rice phirni with step by step photo:

- firstly, use full cream / thick milk to get more creamy texture to phirni.
- also adjust the amount of sugar depending on your sweet tooth.
- additionally, soak the rice for 30 minutes and then blend to coarse paste.
- finally, phirni taste great when serve chilled.
