furthermore, the history of shrikhand recipe is quite interesting to learn. according to wiki, shrikhand is a fusion indian and persian cuisine. the name shrikhand comes from ksheer, thickened milk in sanskrit and qand which means sweet in parsi language. perhaps the parsi community who settled down in western india invented this recipe with locally available ingredients.

Ingredients (1 cup = 255 ML)
  • 2 cups curd / yogurt thick and fresh
  • ¼ cup powdered sugar
  • 2 tbsp saffron water
  • ¼ tsp cardamom powder
  • 1 tsp almonds chopped
  • 1 tsp pistachios chopped
Instructions
  1. firstly, place a sieve in a large mixing bowl. make sure there is enough space for water to accumulate at the bottom of the bowl without touching the sieve.
  2. further place a cheese cloth or a hand kerchief into the bowl.
  3. pour 2 cups of fresh - thick curd.
  4. get the cloth together and tie it tightly.
  5. furthermore, refrigerate it overnight. make sure to refrigerate else the curd will turn sour and need to add more sugar.
  6. the next day, we can see the water has separated from the curd.
  7. thick and creamy curd is ready which is also known as hung curd.
  8. further, add in powdered sugar.
  9. also add saffron water. to prepare saffron water, soak few strands of saffron in 2 tbsp of hot water.
  10. mix well making sure the sugar gets dissolved in curd.
  11. further add cardamom powder and again give a quick mix.
  12. transfer to the piping bag or directly scoop into a serving bowl.
  13. furthemore, squeeze the piping bag into the serving bowl.
  14. also garnish with few chopped almonds and pistachios.
  15. finally, store in refrigerator or serve immediately.
