every year since i started my blog, i have been posting the traditional ukadiche modak recipe with better quality and tips, tricks. but i have been getting a lot of requests to focus on other types of modak recipes too which may be easy for rookies or amateurs. moreover, i understand that there are many moulds based easy recipes, but i am not keen on those. even though i have shown the mould version in this post too, but trust me it’s not special. there isn’t any effort and i personally feel, when you are offering to your beloved god, you need to put some effort and get the best out of it. while you may struggle initially shaping without the mould but it is not any rocket science and you should nail it in the second or third attempt.

furthermore, some more additional tips, suggestions and variants to the rava modak recipe. firstly, in this recipe, i have not used the traditional coconut and jaggery based stuffing as the sugar is mixed into the rava. yet you may stuff the coconut jaggery mixture before shaping it. secondly, i have not added any artificial colour or kesar colour to the rava mixture but adding is an option to make it colourful. you may soak kesar strands in the warm milk and mix it into the rava mixture. lastly, to shape the modak, i have used a toothpick to mark it. this can be handy, but you may also use a fork to shape it.

Ingredients
  

  • ¼ cup ghee
  • 1 cup rava / semolina / suji, fine
  • 2 cup milk
  • ¾ cup sugar
  • ¼ tsp cardamom powder
  • few raisins, for stuffing

Instructions
 

  • firstly, in a large kadai heat ¼ cup ghee.
  • add 1 cup rava and roast on low flame until the rava turns aromatic. make sure to take fine rava, else the texture of modak will be different.
  • now add 2 cup milk and stir until the milk is absorbed well making sure there are no lumps.
  • further, add ¾ cup sugar and stir until the sugar melts.
  • cook until the mixture starts to hold the shape.
  • cover and simmer for 2 minutes, or until the rava is cooked well.
  • now add ¼ tsp cardamom powder and 1 tsp ghee. mix well.
  • transfer the mixture to a large plate and cool slightly. knead the dough forming a smooth and soft dough.
  • to prepare modak without mould, pinch a ball sized rava mixture and flatten slightly.
  • place 2 raisins in the centre and seal tight.
  • form a cylindrical shape and then shape to modak by pressing down gently.
  • using a toothpick, design the modak.
  • you can also prepare modak using the moulds. to prevent it from sticking, make sure to grease the mould with ghee.
  • stuff with dry fruits and shape the suji modak.
  • finally, garnish with saffron and enjoy rava modak for ganesh chaturthi.

notes:

  • firstly, if you are using coarse rava, then use 1:3 proportion of rava and milk ratio.
  • also, roast the rava in ghee to prevent it from turning suji sticky.
  • additionally, you can add kesar along with suji to get saffron colour.
  • finally, instant rava modak recipe can also be flavoured with bananas or fruits of your choice.
