I generally prepare fancy vegetable or paneer-based cutlets for most of my parties and occasion meals. However, I recently have migrated to a protein-based diet, and Soya Tikki is the best alternative to all other fancy cutlet recipes. Ingredients
  

  • 1 cup soya chunks / meal maker
  • ¼ tsp turmeric
  • ½ tsp chilli powder
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • 1 tsp aamchur powder
  • ½ tsp salt
  • ½ onion, finely chopped
  • 2 tbsp chilli ginger garlic paste
  • 2 tbsp spring onion, chopped
  • ½ cup roasted besan
  • oil, for frying

Instructions
 

  • Firstly, in a large bowl take 1 cup soya chunks and add 1 tsp salt.
  • Soak in hot water for 10 minutes.
  • Squeeze the water out of the soy chunks.
  • Transfer the soya chunks into the mixer grinder and coarsely pulse.
  • Take the coarse texture of soya into the large plate.
  • Add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp cumin powder, ½ tsp garam masala, 1 tsp aamchur powder and ½ tsp salt.
  • Also add ½ onion, 2 tbsp chilli, ginger, garlic paste, 2 tbsp spring onion, ½ cup roasted besan.
  • Squeeze and mix well, ensuring all the spices are thoroughly combined.
  • Grease your hands with oil and prepare ball-sized tikki.
  • Shallow fry in hot oil. You can also roast or deep-fry.
  • Roast on a low flame until it turns golden brown. Flip over and cook on both sides.
  • Finally, enjoy Crispy Soya Tikki Recipe with dahi green chutney.

How to Make Soya Chunks Cutlet with Step-by-Step Photos

  1. Soak the soya chunks in the hot water for 30 minutes.

  2. drain the water and in a large bowl squeeze off excess water from the chunks properly.

  3. crumble the soya chunks with your hand or alternatively blend the soaked soya chunks  to coarse paste.

  4. mash the potatoes well with your hand.

  5. now add chopped onion, ginger, coriander leaves and green chilli.

  6. also add spices like cumin seeds, red chilli powder, garam masala, coriander powder, chaat masala, aamchur powder and salt.  soya cutlet
  7. mix everything well. it must be a non sticky dough. if needed add some bread crumbs to make it non sticky.
  8. make patties and set aside. (you may make of any shape of your choice like heart, oval)

  9. make a thick flowing paste adding required water to corn flour and maida. for a healthier option than all purpose flour, use besan. make a thick flowing paste.

  10. and dip each patty in the batter. cover on both the sides.

  11. then coat the cutlet in breadcrumbs. alternatively, you can also use rava.

  12. heat oil for shallow. meanwhile, dust the excess bread crumbs. place them carefully in the medium hot oil.

  13. when one side is golden, flip and fry the other side.

  14. drain the soya cutlets on kitchen paper towels to remove excess oil.

  15. Serve soya cutlets hot with green chutney or tomato ketchup.

Notes

  • You may use a pressure cooker to boil the soya chunks so that they can be smashed easily.
  • Make sure to squeeze the soya after boiling. Otherwise, it would not be easy to make the cutlet patty.
  • You can alternatively blend the soaked soya chunks into a coarse paste.
  • You can also use soya granules in place of soya chunks to avoid smashing soyas.
  • To make it healthier, you can also add boiled carrots, corn and peas or vegetables of your choice.
