thandai recipe | 3 ways thandai mix | sardai recipe | thandai masala with detailed photo and video recipe. a popular and refreshing indian beverage drink recipe made with a combination of dry fruits, seeds and spices. it is a purpose-based drink and served especially for the maha shivaratri or holi festival to get the required energy and nutrients for the festival celebrations. generally, it is served with milk with no additional flavouring agent, but can also be prepared with mango, rose and paan flavour.
well most of us prefer the classic thandai recipe, but having multiple flavours and variations is better. from variations and adding flavours perspective, the possibilities are endless and can add almost everything. yet i have only chosen 3 flavours in this post including the classic thandai flavour. the other 2 options i have chosen are mango and paan flavour. the reason i chose mango is that it is the season and paan adds the additional mouth refreshing flavour. you can explore other options like coffee, tea, rose, vanilla, chocolate or any tropical fruits. but i would still emphasise the fact that these added flavours should not overpower the authentic taste and flavour of the actual drink.
furthermore, i would like to add some more additional tips, suggestions and variations to the 3 ways thandai mix recipe. firstly, in this recipe, i have shown a wet or thick paste based masala which you need to mix with cold and chilled milk to make the drink. you may also dry roast the same ingredients and make a powder to make thandai powder and use it whenever you need. secondly, you may also use the mixture and mix it with basundhi or thick milk to make the more sweetened version. as matter of fact, you can deep freeze them in a popsicle to make kulfi out of it. lastly, the same masala mixture can also be used to make bhaang drink which is very famous during holi season. i would not recommend it but the same drink is mixed with cannabis or marijuana.

Ingredients
for thandai masala paste:
- ¼ cup almond / badam, blanched
- 2 tbsp pistachios
- ¼ cup cashew
- ¼ cup melon seeds
- ½ tbsp pepper
- 2 tbsp poppy seeds
- 2 tbsp fennel
- 8 pod cardamom
- ¼ tsp saffron
- 3 tbsp rose petals, dried
- 1½ cup water, for soaking
other ingredients:
- sugar
- milk
- ice cubes
- mango
- yellow food colour, optional
- paan leaf / beetle leaf
- green food colour, optional
Instructions
how to make thandai masala paste:
- firstly, in a large bowl take ¼ cup almond, 2 tbsp pistachios, ¼ cup cashew, ¼ cup melon seeds and ½ tbsp pepper.
- also add 2 tbsp poppy seeds, 2 tbsp fennel, 8 pods cardamom, ¼ tsp saffron and 3 tbsp rose petals.
- add 1½ cup water and soak for 6 hours. if you are in hurry then soak for 1 hour in hot water.
- after 6 hours of soaking, you can see the dry fruits are soaked well.
- now transfer the soaked dry fruits into the mixi along with the water.
- blend to a very smooth paste. thandai masala paste is ready.
- to prepare classic thandai, in a blender take 3 tbsp prepared thandai masala paste and 2 tbsp sugar.
- add 1 cup chilled milk and blend well.
- transfer the thandai into the tall glass along with ice cubes and garnish with dry fruits and dried rose petals.
how to make mango flavour thandai:
- in a blender take 3 tbsp prepared thandai masala paste and 2 tbsp sugar.
- add 3 tbsp mango, 2 drops yellow food colour and 1 cup chilled milk and blend well.
- transfer the mango flavoured thandai into the tall glass along with ice cubes and garnish with dry fruits and dried rose petals.
how to make paan flavour thandai:
- in a blender take 3 tbsp prepared thandai masala paste and 2 tbsp sugar.
- add 2 beetle leaves, 2 drops of green food colour and 1 cup chilled milk and blend well.
- transfer the paan flavoured thandai into the tall glass along with ice cubes and garnish with dry fruits and dried rose petals.

- firstly, i have not added sugar to thandai masala paste as we can adjust the sugar according to the individual serving.
- additionally, you can also prepare coffee, rose, tea flavoured sardai.
