as i previously mentioned there are several variations and flavours of this traditional thandai recipe. most commonly or popularly almond flavoured tandai or also known as badam thandai is prepared across north india during the holi festival celebration. in this recipe almonds have a significant flavour compared to other dry fruits. the other most popular flavoured version is rose variant prepared with rose petal and rose essence. it is popular in the urban areas and is mainly sold as a bottled beverage in supermarket and restaurants. further, the other major variations are mango tandai and kesar badam thandai which makes it more creamy and rich.

while the recipe for thandai is extremely simple, yet some variations and tips while preparing it. firstly, and more importantly sardai drink tastes great when served chilled. hence plan your recipe well ahead and refrigerate it overnight for good results. also, use chilled milk while preparing it to hasten the process. secondly, this recipe is not a bhang tandai and is a pure nutritious non-alcoholic drink. if you wish to have bhang based drink than extend this recipe by adding 10-15 soaked cannabis leaves. lastly, add gulkand instead of rose petals to make thandai more flavourful.

Ingredients (1 cup = 250 ML)
  • ¼ cup cashew / kaju
  • ¼ cup almonds / badam
  • 2 tbsp poppy seeds / khus khus
  • 2 tbsp melon seeds
  • 1 tsp fennel seeds / saunf
  • 1 tsp pepper
  • 3 pods cardamom / elachi
  • 1 tbsp dried rose petals
  • ¼ cup sugar
  • 4 cup milk chilled
  • few threads saffron / kesar
Instructions
  1. firstly, in a small blender take ¼ cup cashew and ¼ cup almonds.
  2. also add 2 tbsp poppy seeds, 2 tbsp melon seeds, 1 tsp fennel seeds, 1 tsp pepper, 3 pods cardamom and 1 tbsp dried rose petals.
  3. blend to fine powder without adding any water. thandai masala powder is ready.
  4. now to prepare thandai drink take few cubes of ice in a glass.
  5. add in 3 tsp of prepared thandai masala.
  6. pour chilled milk and mix well. allow to rest for 10 minutes before serving.
  7. finally, serve thandai garnished with few saffron threads and dried rose petals.

notes:

  • firstly, add nuts of your choice to make drink more healthy.
  • also, instant sardai powder can be stored for months when refrigerated.
  • additionally, boil the milk with prepared masala powder for 5 minutes and later serve chilled.
  • finally, thandai taste great when prepared with thick chilled milk.
