I have posted quite a few soybean or meal maker recipes, but this has to be one of the closest mock meat recipes. Last time I did share the kathal curry which carries a meat-like texture. But the use of soybean or meal maker as chicken meat has to be the closest one. As matter of fact, I also tried this recipe with tofu, but it wasn’t easy with that. Tofu carries more moisture and hence you may need to add flour or cornflour to hold its shape. This would solve the problem of shape but it may disturb the texture and taste. Whereas, in this recipe, I have not added any flour and thus hold the crumbly meat texture. In addition, you may use the same meal maker mixture to shape it like chicken drumsticks. Perhaps I would share it soon as a separate recipe. Do try this one and let me know your feedback on this.

Furthermore, some more additional tips, suggestions and variants to the veg chicken nuggets recipe. Firstly, the meal maker before it is used in any recipe has to be thoroughly washed, rinsed and boiled. This step ensures all the impurities and smell are drained and do not get into the actual end product. secondly, to get the golden brown and crunchy texture, crushed corn flakes are the only option for the coating. if you are fine with just golden brown, you may even use panko bread crumbs for coating. lastly, while deep frying if you see the nuggets dissolve or separate, you may deep freeze coated nuggets for 10-15 minutes. This helps to hold its shape while deep frying and do not absorb much oil.

Ingredients
  

for soya mixture:

  • 2 cup soya chunks
  • water, for soaking
  • ½ tsp chilli powder
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • 2 chilli, finely chopped
  • 2 tbsp coriander, finely chopped
  • ¾ tsp salt
  • 1 tsp ginger garlic paste
  • 2 potato, boiled & mashed
  • 2 tbsp corn flour

for slurry:

  • ½ cup corn flour
  • ½ cup maida
  • ¼ tsp pepper powder
  • ¼ tsp salt
  • water, for batter

other ingredients:

  • 1 cup corn flakes, for crumbs
  • oil, for frying

Instructions
 

  • firstly, in a large bowl take 2 cup soya chunks and soak them in hot water for 20 minutes.
  • drain off the water and rinse well.
  • squeeze water and transfer to a mixer jar.
  • pulse and grind to coarse texture.
  • transfer the shredded soya chunks into a large bowl.
  • add ½ tsp chilli powder, ½ tsp cumin powder, ½ tsp garam masala, 2 chilli, 2 tbsp coriander, ¾ tsp salt and 1 tsp ginger garlic paste.
  • also, add 2 potatoes and 2 tbsp cornflour. mix well.
  • squeeze and mix well making sure the mixture is well combined.
  • now pinch a ball sized mixture and shape random. keep aside.
  • now prepare the slurry, take ½ cup corn flour, ½ cup maida, ¼ tsp pepper powder and ¼ tsp salt.
  • prepare a smooth batter adding water as required.
  • now dip the soya nuggets into the corn flour slurry.
  • coat into crushed corn flakes.
  • deep fry in hot oil, keeping the flame on medium.
  • stir occasionally and fry until the nuggets turn golden brown and crisp.
  • finally, enjoy veg chicken nuggets with tomato sauce.
