Ingredients
  

for suji dough:

  • 2 cup rava / semolina / suji
  • 2 tbsp sesame
  • ½ tsp salt
  • 2 tbsp oil, hot
  • warm water, for kneading
  • oil, for frying

for chatpata flavour:

  • ½ tsp turmeric
  • 1 tsp chaat masala
  • 1 tsp mix herbs
  • ½ tsp pepper powder

for masaledar flavour:

  • ½ tsp chilli powder
  • ½ tsp garam masala
  • ½ tsp black salt

Instructions
 

how to make crispy suji namkeen:

  • firstly, in a mixer jar take 2 cup rava and grind to fine powder.
  • transfer the suji powder to a large bowl. you can also add half cup maida at this stage to make the binding easy.
  • also add 2 tbsp sesame, ½ tsp salt and mix well.
  • pour in 2 tbsp hot oil and mix well.
  • crumble and mix making sure the flour is moist.
  • further, add warm water and start to knead the knead.
  • knead the dough adding water as required to form a soft dough.
  • cover and rest the dough for 20 minutes or until the suji absorbs the water.
  • after 20 minutes, knead the dough gently.
  • pinch a ball sized dough and roll.
  • roll to a slightly thick thickness.
  • cut into thin strips or the shape of your choice.
  • deep fry in hot oil, keeping the flame on medium.
  • stir and fry on medium flame until the suji sticks turn crispy.
  • drain off the sticks to remove excess oil.
