motichoor ladoo recipe | motichur laddu recipe | motichoor laddu recipe with detailed photo and video recipe. motichur laddu’s are prepared during festival occasions like diwali, ganesh chathurthi and navartri.
motichoor ladoomotichoor ladoo recipe | motichur laddu recipe | motichoor laddu recipe with step by step photo and video recipe. basically, mothichur laddu is an exotic indian sweet prepared with besan florets. the florets are then soaked with sugar syrup and then it is transformed to a lemon sized balls known as laddu’s. this is very similar to boondi ladoo where the florets are in big size.

traditionally, motichoor ladoo is prepared with motichoor laddu jara or jharna. you can easily find these with the halwais or professional cooks. however, i have used fine vegetable grater with small holes. also, perforated spoon can also be used, but i wouldn’t recommend the later option. it would be time consuming unless you are having a bigger size spoon. moreover, i have partially grounded the besan florets to make it very fine.

motichoor ladoo

i have used the food colour to get the orange colour in mothichoor ladoo recipe. if you do not have orange food colour, than you can mix yellow and red colour to make it orange. adding food colour is optional and you can totally skip it. besan florets would anyway have the rich yellow colour and it is sufficient for these ladoos. usually food colour is added to make it more attractive and presentable. if you are making these laddus just for your family than skip it.

Ingredients
for besan batter:
  • 1 cup besan flour
  • 1 tbsp bombay rava / sooji / semolina
  • pinch of baking soda (optional)
  • ¼ tsp orange food colour
  • water as required to prepare batter
for boondi:
  • oil for deep frying
  • fine vegetable gratter
for sugar syrup:
  • 1 cup sugar
  • ¼ cup water
  • 1 tbsp lemon juice
  • ¼ tsp orange food colour
  • ½ tsp cardamom powder
  • 1 tbsp cashews, chopped
  • 1 tbsp almonds, chopped
  • ¼ cup milk
Instructions ( 1 cup =255 ml)
besan batter recipe:
  1. in a large mixing bowl sieve besan, bombay rava and pinch of baking soda.
  2. to that add orange food colour and give a rough mix.
  3. now add water slowly and prepare smooth flowing batter.
boondi preparation recipe
  1. take fine vegetable grater.
  2. pour prepared besan batter.
  3. slowly tap and make sure the drops of besan fall into oil.
  4. take off and drain over the kitchen paper towel.
sugar syrup recipe:
  1. in a kadai, take 1 cup of sugar and add ¼ cup of water.
  2. mix well till you attain 1 string consistency.
mothichoor laddu recipe:
  1. now add lemon juice to sugar syrup.
  2. also add some orange food color.
  3. to that add cardamom powder and give a good mix.
  4. then add prepared boondi.
  5. mix well and make sure to coat the all the boondi with sugar syrup.
  6. now take half the quantity of boondi coated with sugar syrup and blend 3-4 pulses in mixi to form coarse powder.
  7. add some chopped dry fruits and mix well.
  8. now add milk and give a good mix.
  9. prepare the ladoo taking a small amount of boondi.

  2. with the help of cup, pour prepared besan batter.motichoor laddu
  3. slowly tap with the help of spoon, making sure the drops of besan fall into oil.motichoor laddu
  4. do not over crowd the boondis and flip over if required.motichoor laddu
  5. once they are almost crisp, take off and drain over the kitchen paper towel.motichoor laddu

boondi preparation recipe – option 2:

  1. take small holes perforated spoon.motichoor laddu
  2. with the help of cup, pour prepared besan batter.motichoor laddu
  3. slowly tap with the help of spoon, making sure the drops of besan fall into oil.motichur laddu
  4. do not over crowd the boondis and flip over if required.motichoor laddu
  5. once they are almost crisp, take off and drain over the kitchen paper towel.motichoor laddu

sugar syrup recipe:

  1. in a large thick bottomed kadai, take 1 cup of sugar.motichur laddu
  2. to that add ¼ cup of water.motichur laddu
  3. mix well and allow to boil till you attain 1 string consistency. do not touch the sugar syrup with bare hands as it will be very hot. make sure to dip your fingers in cold water before you check for consistency.motichur laddu

mothichoor laddu recipe:

  1. now add lemon juice to sugar syrup so that it stops the crystallization process.motichur laddu
  2. also add some orange food colour to make ladoos more bright and colourful.motichur laddu
  3. to that add cardamom powder and give a good mix.motichur laddu
  4. then add prepared boondi.motichoor ladoo
  5. mix well and make sure to coat the all the boondi with sugar syrup.motichoor ladoo
  6. now take half the quantity of boondi coated with sugar syrup. and blend 3-4 pulses in mixi to form coarse powder. this also helps binding while preparing ladoo.motichoor ladoo
  7. add some chopped dry fruits and mix well.motichoor ladoo
  8. you can see the the mixture is dried and all the sugar syrup has absorbed.motichoor ladoo
  9. so now add milk and give a good mix.motichoor ladoo
  10. prepare the ladoo taking a small amount of boondi. grease your hands with ghee to prevent from sticking.motichoor ladoo
  11. garnish ladoo with your favourite dry fruits and serve.motichoor ladoo


notes:

  • add generous amount of food colour to get rich orange colour.
  • the amount of milk depends on the texture of boondi. so add little by little, till you are able to prepare ladoo.
  • if your grater is very fine, then you can avoid blending the boondi to coarse powder.
  • make sure to attain 1 string consistency of sugar syrup, else you will not be able to prepare ladoo.
  • grease your hands with ghee to prevent from sticking.

  3. All recipes are very good…can you please tell why rawa is added to the batter of motichoor laddu…won’t it make the boondi hard…?
